Tasted September 11, 2021Potent, amazing nose of lavender, honey, chamomile, caramel, thyme, cola, mint, cinnamon, vanilla, wood, grapes. Herbal, spicy, woody taste; thyme, cinnamon, tree bark, mint, . Smooth on the palate. Beautiful bottle as well, for what it’s worth. -

Tasted October 11, 2020I must say, this was the star of today’s distillery visit, and perhaps the first time a gin has outshone a whiskey for me. I’ve never tried anything quite like this. It’s miles away from the traditional London Dry, with oodles of honeysuckle, lavender, and rosemary on the nose that carries over into the palate. I had this neat and in a fizz cocktail and it was excellent both ways. I can see this making a terrific old fashioned too with some orange or cardamom bitters, a Demerara sugar cube, and a slice of blood orange topped off with a splash of Topo Chico (because Texas). I’ll definitely be hunting down a bottle at $30 and you should too. Cheers! -

Tasted March 26, 2020This is one of my go-to gins (although I may be slightly biased since I live near the distillery). It does drink almost like a whiskey. Very smooth, and great on the rocks. I do like it with tonic water, but it is VERY different than your usual gin & tonic. I am not a big fan of juniper-forward gin, and it is hardly noticeable here (a big plus for me).
