I think the yellow chartreuse is a bit under appreciated. Its hard not to be when it's often compared to the green version.
The nose is herbal with some nice saffron notes. The palate is sweet, a touch thin and features some spice and orange peel. The finish is pretty long with no burn.
The problem with the yellow is that it feels thin when compared to the green. It's still very good though and works great in cocktails.
Nose: citrus peel, various herbs and spices, anise, tree bark and jasmine. Very herbal on the palate, saffron maybe, lime, anise, thyme, mint, cinnamon?, ginger; quite sweet with some spice and finishing bitterness. Thick. Delicious.
Green chartreuse is one of my favorite spirits of all time. Yellow chartreuse, as most have noted, has less heat and is sweeter. I also think the anise flavors are much stronger, though none of the herbal notes hit you in the face as hard as green chartreuse. I found yellow chartreuse very tasty, and am looking forward to experimenting with it in many new cocktails.
