A delicate, Irish Whiskey by Dunville's (originally Spirit of Belfast founded in 1808) that is a blend of pot still, malt & grain whiskeys made with the family's recipe from local organic barley; aged in ex-bourbon casks. It has an aromatic birth with notes of fruits, grain, nut, wood & spices; a rich & balanced life adds notes of freshly baked bread, toasted malt, vanilla bean, pear, citrus, almonds & oak; that leads to a long & herbal death. A complex, Single Malt Irish Whiskey by brothers Conor & Alan Hyde founders of Hibernia Distillers in Skibbereen, Ireland distilled using a copper pot still & aged for 6 years in first-fill Oloroso Sherry hogshead casks. It has an aromatic birth with notes of fresh malt, smoke, orange, chocolate truffles, honeyed stone fruits, baking spices & lemon curd; while a rich & oily life adds notes of stewed over-ripe plums, raspberry, vanilla custard, dried apricots & a hint of shortbread; that leads to a long & spicy death with notes of honeyed spices, caramel & tart red berries. A delicate, Blended Irish Whiskey by brothers Conor & Alan Hyde for Hibernia Distillers in Ireland made from a blend of 75% 8-year-old grain & 18-year-old Single Malt Irish Whiskeys matured in Ex-Bourbon & ex-Sherry casks producing 5000 bottles. It has an aromatic birth with notes of lavender, lemon, plantain, caramel & oak; while a balanced life adds notes of grains, vanilla, toffee, espresso & baking spices; that leads to a delicate & smooth death with notes of coffee, honey & spice. April 2019 / May 2020 / September 2019 / 2021 / 2022

A complex, Irish Whiskey by Hibernia Distillers in Country Cork, Ireland. It is a triple-distilled blend of 75% grain & 25% malt Whiskey; the grain one was matured in ex-Bourbon casks for four years, while the malt spent the same amount of time in former Oloroso Sherry butt. The blend was then moved for another 6 months to a cask infused with Stout that came from the Cotton Ball micro-brewery. Only 5000 bottles exist. It has an aromatic birth with notes of coffee, caramel, spices & fruits; while a rich & complex life adds hints of malt, milk chocolate & caramel; that leads to a bold & creamy death with notes of honey & stewed fruits. A rich, blended single malt distilled & aged at Yamazaki, the very first malt distillery of Japan. A Sherry, Port & Bourbon cask extravaganza, some single malts aged for over 20 years in Sherry Casks, & some "Young Talents" single malts aged in Bourbon Barrels. It opens with notes of passion fruit & strawberry, while the palate is sweet & jammy adding notes of oak, while finish is long & complex with notes of honey, licorice, tea & tropical fruits. It has an aromatic birth with notes of toffee, passion fruit, stewed plums & Caribbean five-spice; while an elegant life adds notes of malt, vanilla, shortbread biscuits, toffee, apricot, vanilla creams, hint of dried pineapple & mango; that leads to a woody death of medium length with notes of cinnamon, figs, coriander & fresh-baked bread. An elegant, Limited Release Cask Strength Single Malt Irish Whiskey by Jack Ryan Distillery in Dublin, Ireland aged for 12 years in ex-bourbon casks before being bottled at 92-proof. It has a fruity birth with notes of pears, apples, pineapples, a hint of citrus, honey & vanilla; while a tropical life adds notes of lemon, orange zest, tropical fruits, hints of oak, biscuits & cream; that leads to a balanced death with notes of malt & wood.
