Single Pot Still — Ireland
Reviewed May 11, 2019 (edited May 21, 2020)Now that i’m further into the bottle...here’s an updated tasting. This whiskey is just simply an amazing example of the wonders of pot still spirits. Nose: Rich malt, milk chocolate, vanilla and caramel cream, apple turnovers with sugar icing, and then the pot still comes In with hints of copper and nitro lacquer, shortbread cookie and spiced pears. Palate: entry is sweet and oily with a little peppery spice on the sides of the tongue. Warm alcohol burn down the back of the throat. Apples and brown sugar, clove, cinnamon, cherry liquor, bourbon like vanilla, chocolate fudge, pear schnapps (Williams), Finish: slightly tannic and drying, cocoa, cracked pepper, flambeed pears and rum over crumb cake, vanilla and toffee. -

Tennessee Whiskey — Tennessee, USA
Reviewed April 22, 2019The nose is sweet and woody. A forest of wood notes. Cedar, oak spice, sassafras, cola syrup, caramel and brown sugar, vanilla, creme brulee, banana pudding, cherries, leather. I could linger over the nose of this glass for hours. There’s a lot going here. The palate is sweet on entry with a little peppery spice on the sides of the mouth. Going down it explodes in some ethanol heat. Cherries, caramel, vanilla, toffee, chocolate. Finishing with big sour oak and drying leather note. Very tannic. The heritage barrel is an exploration in oak and woodiness and I have loved every moment of this journey. -

Single Malt — Campbeltown, Scotland
Reviewed April 17, 2019 (edited July 12, 2019)On the nose is tropical fruit and ripe melon in spades. Hints of seaweed and a little tinge of peat funk weaving its way in. The palate takes an immediate hit of campfire ash and brine. Malt, pear, cinnamon, clove, and cracked pepper. The finish is like a creamy Connecticut wrapped cigar. A gorgeous and complex dram beautifully woven together. -

Single Malt — Highlands, Scotland

The nose is intense, spicy and rich: mandarin oranges, almonds, raisins, wildflower honey, dried cherries, pipe tobacco The palate comes in just as intense and rich as the nose: dates, figs, raisins, candied oranges, clove and allspice, cracked white pepper, woody and earthy peat undercut. The finish is drying, tannic, leather and sweet spice. -

Bourbon — Kentucky, USA
Reviewed March 28, 2019 (edited April 11, 2019)Nose: honey, apples, dusty corn, vanilla, strawberries, baking spice, ceylon tea, chocolate fudge. Palate: sweet corn, caramel, vanilla, tobacco leaf, nerds candy, sour oak. Finishing with leather and bitter tea notes. -

Single Malt — Islay, Scotland

Maple smoked bacon, sherry notes, candied orange, figs, fresh hay, seaweed, iodine, brine; all layered and dancing together in a beautiful harmonious movement. Palate: thick and creamy on entry. Sherry notes of dark fruits, malt, honey, barrel spice, tamed smoke, tar, molasses and brine. Just an amazing, smooth, delicious dram of whisky. Not overly complex...its just joy for your tastebuds in a glass. -
One of the most intoxicatingly delicious noses on a whiskey ever. Nose: Pipe tobacco, rich sherry notes, fig, dates, toffee, dark chocolate, walnuts. Palate: The proof is a little disappointing and it feels watery. But the flavors are still amazing. I can only imagine how amazing a cask strength version would be. A lot of the nose carries through on the palate. Milk chocolate covered dates and walnuts. Honey, sweet tobacco, biscuit and fig preserves. A beautiful whiskey but I’m just left wondering what if...if the proof where at least 46 or higher.
