2.26.22 Served: Gibraltar, fridge chilled Bottle Open: <1 Month Side by side with Dolin, Cñia Mata, and Cocchi Deep chocolate vanilla notes. Very desserty, and great intro vermouth for those who have been put off. Makes excellent manhattans and boulevardiers, but tends to overpower negronis. In short, mix with whiskey, but be cautious with other spirits.

2.25.22 Served 1: Neat, Glencairn Served 2: Jungle Bird Bottle Open: >1 Year Aroma: Molasses, vanilla, candy Flavor: Mouthfeel is thin. Very spicy The sting is felt all around the mouth. Aeration moves all the aromas to the nose. Not my favorite on its own. Brings delightful complexity to a Jungle Bird.

Reviewed February 24, 2022 (edited May 5, 2022)2.23.22 Served: Neat, Flute Bottle Open: 2 Months Abv: 24% Brix Refractometer reading: 54% (Not actual brix due to presence of alcohol) Aroma: First Impressions are brownies and bakers chocolate. Returning after several sniffs yields a more medicinal chocolate aroma. Flavor: Like drinking brownies up front with a darker version of hersheys chocolate syrup in the back. Must be taken in tiny sips, otherwise the alcohol and chocolate flavors clash. Makes an amazing Grasshopper (Won't be green) In contrast to Tempus Fugit's suggestions, their Creme De Menthe is much too strong for an equal parts grasshopper. 2.23.22 Served: Neat, Flute Bottle Open: Same day and 11 month (near empty, highly oxidized) Side by side Aroma: New: Apricot Candy. How I imagine apricot gummy worms or hard candies to smell like. 11 month: Dried Apricot. A much lower impression of acid. Flavor: New: Proofy and fresh. Shares some of the same flavors as regular brandy, likely due some common congeners. Apricot flavor is fresh, like bitting into one. 11 month: Very gentle on the tongue. Less alcohol burn and less acid. Once again, more of a dried apricot feel, with more skin flavor. More pleasant to drink on its own than the fresh one, but I anticipate it getting lost in cocktails more easily than the new. I give this a 4.5 because I know how well it stands up in cocktails. It is easy to underestimate how well the apricot flavor carries through in a short sour. I wouldn't necessarily recommend drinking it neat or on the rocks. Here's my recommendation: Dan Carlson's "Limpa" Cocktail: 1/4oz - 1/2oz Simple Syrup 3/4oz - Orchard Apricot 1oz Lemon Juice 2oz Aquavit (Butter-washed if possible, 8oz Butter per 750ml) Serve shaken in a either in a coupe or over a large rock. Reviewed February 20, 2022NOM 1480 Amatitlan, Jalisco 100% Agave Certified Organic 2.19.22 Served: Neat, Flute Bottle open: <1 Week Aroma: Oak, Cream Soda. So much cream soda and I don't know why. Banana peel, banana bread. A lot of banana-adjacent aromas that lack banana pungency. And back to cream soda. It's spot on. Slight marjoram notes upon returning after forgetting to take a sip for 5 minutes. Flavor: Harsh and sweet start, cream soda mids, savory spice cabinet finish. Feels like bourbon once it meets the back of the mouth. Chewing: Elote (spicy, corny, mayo-ish) Aeration: Sweet Exhalation: Coconut macaroons, meringue. Overall, very pleasant to sip. The age does not smooth over the alchohol. -

Reviewed February 19, 2022NOM 1480 Amatitan, Jalisco 100% Agave Certified Organic 2.19.22 Served: Neat, Flute Bottle Open: <1 Week Aroma: Green plantain, vanilla, oak sawdust, birthday cake, beeswax. Distinctly sweet. The wood fades into vanilla during subsequent inhalations. Flavor: Woody, dry, and lightly savory at the front of the mouth. More cakey and sweet in the middle. Banana peel finish. Chewing: Savory Aeration: Pound cake, then savory once diluted with saliva. Exhalation: More cake with some banana. One thing is for sure, this tequila loves the air. I think it would taste good as a shaken sour.
