2.8.22 Served: Neat, Flute Bottle Open: 2 years, almost empty. Likely highly oxidized. Aroma: Banana, walnuts, and caramel. Flavor: Light and smooth texture. Banana Bread is the biggest impression (mostly bready). Starts with papaya. Mids with caramel and banana bread. A little bit of harshness on the back end. Banana candy notes begin to stand out after palate fatigue. Overall pleasant for sipping. Also tried it in a toddy, (honey, angostura, orange blossom, lemon) and it was quite pleasant.

Before dilution: Generally minty vegetal, and spicy. After dilution: Fruity up front. Mids with green sage, like biting down on a whole leaf. Lingering spicy and mouth-drying finish. -
2.2.22 Served: Neat, flute, Bottle open: Same Day Aroma: Aqueous. Grapefruit peel and lemon pith. Nasal fatigue allows savory notes of caraway and allspice. Flavor: Starts as grapefruit soda (none of the bitterness of real juice yet). Mids like candied oranges with a syrupy mouthfeel. Finishes with ginger-like spiciness and clean bitterness. Has the same "type" of finish as fernet. Might use the same bittering agent. Elements of: Nonino, Montenegro, Fernet.

Reviewed January 29, 2022 (edited February 19, 2022)1.29.22 Served: Neat, Snifter Bottle Open: Same Day Aroma: First impression is that of rich caramel on the stove. The smell of sugar just before burning, and the nutty mallaird reaction of browning butter. Second sniffs with more intense swirling yield tropical aromas, mostly papaya, with a bit of mango. There is a smell that I can only describe as "freeze pop" that I attribute to many other rums that has a faint presence here. It's a plastic-y and artificial fruit sort of smell. On the whole, much more pleasant when left to rest. Flavor: Medium, lingering body. First impression is buttery like the nose breathing back out gives a papaya-banana combo. A decent amount of sweetness. The burn is suppressed but not completely muted by the flavor. Overall impression: Might not drink this straight, but its pleasant character would do well in simple cocktails where the mixers support rather than overpower its flavors. -

Reviewed January 25, 2022 (edited October 22, 2023)1.23.22 Served: Neat, Glencairn Bottle Open: Unknown (Friend) Aroma: Bready, Corny, Savory. Quite reminiscent of jalapeño cornbread. Flavor: The very same. Sweetness and body give the impression of honeyed jalapeño cornbread. Wonderful for sipping. Probably unsuited to dark cocktails like old fashioned and manhattans. Would be curious to try in sours and boulevardiers.
