Reviewed May 22, 2019 (edited February 12, 2024)Oak and carmel on the nose. Explosion of oak, ethanol heat, and spicy sweet grain in the mouth. A little linseed oil, oak, and eucalyptus astringency between the mouth and finish. Then vanilla, nuts, earthy cereal and malt, oak and spice on the long finish. A big whisky that will open up with a little water/ice. It's also young, and would probably be a lot more interesting with more time in wood. Would help justify the hefty price too. Still, worth experiencing another unusual (in a good sense) product from an inventive distillery. -
Batch 161, ca.2019. Beautiful color. Light floral vanilla and tropical fruit on the nose. Sweet grain, light honey, floral and vanilla oak in the mouth. Medium viscous mouth feel and quick clean finish with lingering oak and spice. Good, not bad sipping, but not as memorable as I'd hoped at this proof (would be interesting to try this at 100-110).

strong juniper and citrus nose, but anise and spice/pepper explodes in the mouth. juniper and strong citrus grow on the finish which is dry and a little hot. it's an unusual gin, but makes an interesting mix in classic cocktails calling for absinthe and citrus (like Corpse Reviver #2--this gin is almost there on its own). can see it making an interesting Tom Collins or G&T too. definitely worth experimenting.
