Reviewed September 18, 2021 (edited September 23, 2021)Aroma of vanilla, apple and some sweet honey notes. Flavor mimics closely with those same notes, plus some cereal grain and a hint of Cocoa. A little peppery on the finish. Few drops of water accentuate some fruit notes, the apple and the cocoa. Drops off pretty quickly. -

Reviewed September 9, 2021 (edited December 21, 2021)Wow, I like this more than I would have guessed. Sweet, Creamy vanilla for me. Almost Creme Brulee. A nice bit of spice, some apple and an almost almond note towards the finish. Perhaps almond extract to be more precise. Good smooth vanilla finish. -

Reviewed August 21, 2021 (edited August 27, 2021)Wow, really like this. My son brought some over and we are having a dram. Caramel, vanilla with a balanced sweetness. Some cocoa (light) notes as it opens. Delicate and yet enticing. I will grab a bottle. Definitely honey in both flavor and body -
Baker's Small Batch Bourbon

Reviewed August 19, 2021 (edited December 16, 2021)OK, so I had a bottle of this years ago. Now back for a review. Baker's Small Batch, not the new one. I consider this a standard Bourbon caramel Bourbon. But this is also among the top Bourbons that really needs a few drops of water. Brings it to life. Lots of baking spice and some pepper bloom and the finish is longer with some cinnamon. -

Reviewed August 15, 2021 (edited July 5, 2022)Aroma is much sweeter than expected. Brown Sugar and caramel, but with a distinct Rye note on the back. Slightly herbaceous. Not as much oak influence as the 12 for me. Ahh, the Aroma hinted. The flavor is very herbaceous with dill & mint with notes of tobacco. Light vanilla. Drops of water bring more tobacco up front. In fact, reminds me of the brief period where I chewed a little tobacco. (Beechnut) The water actually brings more vanilla out as well. More minty as it continues to bloom. -

Reviewed August 15, 2021 (edited November 27, 2021)I've enjoyed this several times at intervals over the last few years. Never sat for review purposes, but always loved it. This is the Sauternes version and it's wonderful. Oak, beautiful spice & grain and banana on the nose. I wouldn't be able to specifically pick Sauternes if I didn't know, but as it opens more, wine notes on the nose. Later some vanilla, after tasting it... First thought on first sip, beautiful banana bread or banana pudding. (with some cream notes). Vanilla on the finish and this continues to come to the forefront as it opens. (as noted in Aroma). I'll do it, but I'm afraid to add a couple drops of water.. But I need to for the review. My standard. But it does not need anything.... Ahh, not a problem.. Some menthol and mint come out. Aroma is kicked up again. Some black pepper on the nose after water. -

Knob Creek 15 Year Bourbon (2020 Release)

Reviewed July 23, 2021 (edited December 18, 2021)With Booker's as my personal favorite brand, high end Knob Creeks are usually not too far behind. I found my first bottle of this upon release and I'm about 80 % of the way through the bottle. Great news is that recently I found another on a shelf. While an expensive bottle, I just love this. Peanut Butter Pie for me. Creamy, peanut butter, and vanilla notes. The finish is the star for me. Long & rich vanilla peanut notes with a Creamy mouth feel. Few drops of water expand the finish. Just wonderful. -
Wow, really herbaceous and pine forest like. (later read the back of the bottle and saw Gin reference.. Yes!) moments of dill. A sweetness in the Aroma towards the end. Few drops of water pushed dill back and pine forward with sweetness. Flavor mostly followed my track on the Aroma with a touch more sweetness on the palate vs the nose. Moment of cinnamon candy, pine remains. Spice on the finish, but it fades too quick in my mind. Good. Not great. I've had Rendezvous and enjoyed that more.
