Oak & Eden Bourbon & Spire -Toasted Oak
Bourbon — (bottled in) Texas, USA
Reviewed May 11, 2022 (edited November 14, 2022)Relatively soft throughout, bordering on thin, but with some lingering spice at the finish. Oak is the only real full flavor/smell. Caramel, oak, red hots, pear, mint, blackberry, honey, charcoal, rye, and chocolate form a soft, but nice, nose. Oak dominates on the palate, with char, cinnamon, caramel, blackberry cobbler and a fairly heavy dose of milk chocolate. Finishes oaky and peppery. I think it’s good, but if this were richer it would be much better. -

Ry3 Cask Strength Private Reserve Rum Cask Finish
Rye — Virginia , USA
Reviewed April 30, 2022 (edited November 11, 2022)Batch 3, Bottle 131, “Exclusively for Mississippi”. The rum cask certainly stands out on the nose, adding a sweeter compliment to the strong rye. Other notes include sunflower seeds, pear, dark chocolate, brine, sherry, char, caramel and grass. A fair amount of heat opens the palate, followed by a rich sweetness. Cinnamon dominates throughout, but there are also chocolate, stewed apple, burnt caramel, cherry, vanilla and of course, rye. A bit of red Twizzler on the back end. I’m maybe getting a hint of rum at this stage, but can’t say definitively. Long, hot, peppery and spicy finish, again dominated by cinnamon with a peppery and slightly piney aftertaste. Lovely stuff, but not to be used to intro your mom, your lighter side, or anyone else, to ryes. -
Crème brûlée, malted grain, vanilla, oak, butterscotch, cinnamon, cocoa, pear and corn nose. Sweet and spicy, malted grain, cinnamon, caramel apple, barrel spice, oak and popcorn on the palate. Peppery finish. Some very unusual elements for bourbon, as it’s dominated by the taste and smell of pre-fermentation malted grain, like I’m brewing beer.Leiper's Fork Distillery

My first taster: Fruity and sour nose, like stone fruits, cantaloupe, oranges and sour cherry beer. Also a little char, lime, maple syrup, oak, ear wax and earth. Very unusual so far. Fruity, sweet and hot on the palate, with caramel, brown sugar, peach, white sugar, cinnamon, cherry, melon, charred wood and more sugar. Potent, artificially sugary sweet and unbelievably fruity and sour on the nose. Very atypical. I’m not so sure about this. I hated it and gave it a 1.5. I think a lot of that was me though, as of the second go round. While I still agree with a lot of the notes and flavors, I now don’t find the nose to be quite so fruity or sour, and while it is quite sweet, it isn’t quite so artificially so. Now it’s more citrus, leather, cantaloupe, char, vanilla and oak on the nose; cinnamon, wood, white pepper, sugar, char, cherry and cantaloupe on the palate; finishing with red hots and dark chocolate. Still not great, but much better this time. Drinks very hot for 110 proof and 12 years old. Odd situation indeed…Old Forge Distillery
