Tastes

Peppery, spicy agave, salt air, pine needle, wood nose. Semi-sweet taste, very vegetal with vanilla and spicy wood flavors.

Nose of brine, earth, slight wood smoke, minty and bitter herbs, mesquite, green agave, fresh bread and wood. Rich, vegetal and herbal on the palate, minty, earthy, with wood, grass, agave and light smoke. Divine.

Musty, vegetal nose with aged cheese and light citrus. Sweet, fruity, light white peppery taste. Unique for sure.

Vanilla, lemon, cotton candy, wood; very little agave comes through on the nose. Smoky, fruity and lightly sweet and spicy taste with almost a dessert-like quality.

Smoky, earthy, lightly vegetal and woody nose. Light on the sweetness, more wood and smoke in the taste. Light heat.

Herbal and green grassy nose, earthy, spicy sotol, black pepper, green bell pepper, mint, anise and a touch of smoke. Sweet, peppery, green and smooth on the palate, with lush green herbs, arugula, black pepper, mint. The sweetness is difficult to describe. It’s sweet like vanilla or caramel, but also green and vegetal. I’ll just call it sweet sotol. The finish is long and peppery with a late spicy kick.

Wood smoke, green sotol, earth. Smoky and peppery and slightly vegetal.

Nose of earth, smoked pork, wood, agave and white pepper. Taste is much the same; smoky and a little sweet. Very smooth.
