Reviewed February 10, 2024Cachaça Magos de Minas is produced in Itaverava, Minas Gerais, but is moving to the city of Betim, Minas Gerais. According to the producer, the change in location is the result of the search for increased quality in production and its flow via trade and export, as Betim is a dry port. The cachaça has a characteristic yellow tone, crystal clear, bright. Prepared as a blend, having in its composition a batch of cachaça stored in oak barrels and a batch of cachaça stored in amburana, mixed in a personalized proportion for a smooth sensorial identity with a striking woody flavor emerging without excess, sweet with a touch of chestnuts, smooth chocolate /cocoa, honey, roasted and spicy with a delicate note of spices in the background. Both parts spent at least 2 years stored in each wood. Versatile, it can be enjoyed fresh in single dose shots (50ml) or on the rocks with 1/3 of the glass and a maximum of 2 ice cubes. On hot days it can be previously cooled to 20ºC or less, not exceeding 12ºC, remembering that this will temporarily retain the aromas that will evolve with the natural ambient heating after serving. It pairs best with lightly salted and low-fat dishes, medium-aged cheeses, as well as frugal sweets and milk chocolate. The name Tiê is a tribute to the bird that is considered the symbol of the Atlantic Forest and one of the most spectacular birds in the world due to its reddish plumage. Cachaça Tiê was born in Aiuruoca, in the south of Minas Gerais, on the edge of the Circuito das Águas. It is part of the Terras Altas da Mantiqueira Circuit, the Serra do Papagaio and Serra da Mantiqueira State Park, being considered one of the best cities for Ecotourism and with a great tradition in the artisanal production of cachaça. Its production is artisanal and aligns traditional methods with the good manufacturing practices necessary to guarantee high quality, with a lightly perfumed flavor and aroma. From planting sugar cane to bottling the drink, Cachaça Tiê undergoes rigorous quality control. The cutting of the plant is done manually, without the use of fire, preventing undesirable components from appearing during fermentation, carried out in stainless steel vats with special yeast and for a controlled time. The fermented must, the result of the previous stage, is placed in a copper still to obtain the final product. Of the total distillate, only the heart is stored in stainless steel and oak barrels and is transformed into Tiê Ouro or Tiê Prata. Cachaça Tiê Carvalho is a drink stored for three years in oak barrels to reach the perfect point of maturation. The cachaça has a soft golden color, aromas redolent of caramel, smooth flavors and velvety texture. Robust, it has an alcohol content of 42%. The Aguardente Tiê Canelinha is classified under legislation as a mixed drink based on sugar cane spirit. Produced by combining Cachaça Tiê Ouro with Chinese cinnamon shavings. Reviewed February 5, 2024 (edited April 3, 2024)The soil of the Taquari River valley, in Santa Tereza, Rio Grande do Sul, is identified as one of the most fertile in the world as it has the ideal conditions for planting sugar cane, the raw material for cachaças. The companies Remus and Bettinelli Ltda, managed by partners Ivandro Remus and Michel Bettinelli since 2001, expanded their sugarcane fields in Serra Gaúcha to invest in the production of a premium drink, made in a region with more than 100 years of tradition in the art of making Craft Cachaça . In the field, the harvest is carried out when the sugarcane reaches the ideal maturity point. The planting is completely sustainable, certified with the "Produto Orgânico do Brasil" seal from a participatory entity and supervised by the Serra da Eco Vida nucleus. Having this seal means being able to guarantee the consumer that no type of chemical additive was used throughout the process, from cultivation to harvest, in addition to being proof of the “green” flag and philosophy of the management of Cachaça Velho Alambique. After manual harvesting, grinding is done on the same day so that the juice is extracted as quickly as possible. This action is essential to achieve a quality liquid. The families' proposal is to produce cachaças that combine traditional techniques with modern production touches, focusing on artisanal drinks with just 30 thousand liters per year. Although the focus is to increasingly expand the brand's presence in new Brazilian states, Cachaça Velho Alambique has also taken flight in competitive markets, such as England, Ireland and Italy. "We have been working hard to show the Brazilian public the difference in qualitative terms between the industries' artisanal cachaças. The second step will be to disseminate this culture in other countries as well" explains Ivandro Remus, one of the distillery's partners. Cachaça Velho Alambique Carvalho is a premium and organic drink, which is produced through a blend. Stored for two years in French and American oak (blend of two oaks) it has an alcohol content of 40%. It is an extremely aromatic distillate, with notes of vanilla and a slight spicy touch in the mouth. Amber color, notes of dried fruits, very woody touch, integrated alcohol and long finish. Alambique Batista was founded by José Batista de Oliveira in 1943, at Fazenda Cachoeirinha, in Sacramento, Minas Gerais, on land bordering the Serra da Canastra National Park. At that time, in the middle of World War II, with Brazil in a sugar production crisis, José Batista cultivated on his farm a variety of sugarcane known as Argentina or Tucumã, used in the manufacture of rapaduras to make up for the sugar shortage. It was then that José Batista came up with the idea of fermenting and distilling the broth made from rapaduras, thus inaugurating the production of the drink that would become a legend in the region. In 1958, the brand, at the time called Caninha Batista, gained the famous star logo associated with the slogan "Estrela das Gerais”, enchanting palates until 1974, when its activities were suspended. Today, very few bottles from those early days are kept as rare jewels in the collection of a privileged few. Upon turning 90, Mr. José Batista confessed to his son-in-law Marco Antonio Afonso da Mota his desire to continue his project. Challenge accepted, Marco inherited the secrets and techniques of how to make a good cachaça and continues to perpetuate his father-in-law's dream, keeping alive the legend of the drink and its unparalleled quality. In 2008, with enthusiasm and a keen entrepreneurial spirit, Marco Antônio and his son, Marco Elísio, built the new Cachaça Batista facilities at Fazenda Boa Sorte, rescuing a tradition of more than 70 years, renewed by modern production techniques. Today, the new factory consolidates its position as an enterprise that honors the brand's tradition and projects a new cycle for permanence in a scenario that is openly receptive to Brazilian still cachaça. With its still located at Fazenda São José, in the city of Pirapetinga in Minas Gerais, Arbórea cachaça had its name inspired by the high tops of the trees present in the region. The producers' commitment is to make Arbórea a cachaça that brings the region's identity, but at the same time can innovate by bringing a drink to those who still don't drink cachaça, in other words, opening the market to a younger audience looking for new forms of consumption, such as the use of cachaça in cocktails. Following the best quality standards in the production process and in a sustainable way. The sugarcane bagasse is reused to feed the boiler and make compost. The mill has a high extraction capacity and the fermentation room meets the sanitary requirements for healthy fermentation. “Our still is made of copper, which removes undesirable odors and distills the cachaça.
