Dark golden in color, lots of legs show up quickly, yet a nice sheet remains on the glass. The first nose reveals that it is a little rough around the edges... there's a wonderful malty quality to it, and lots of the right stuff is there. The finish shows up like the nose. Although tasty, It's unfinished. A nice oaky/ milk chocolate sweetness comes through mid-palate, then yields to a dry, almost bitter , barrel dominated finish. They're onto something, and after another 20 years of practice, they're going to have this Tennessee whiskey thing dialed in!

Bardstown Bourbon Co. Origin Series Bourbon
Bourbon — Kentucky, USA
Reviewed August 19, 2023 (edited August 23, 2023)Dark golden straw in color, the legs show up slowly but in great number. Plenty of corn on the nose: corn flakes and semi sweet deer feed corn, as well as buttered toast, vanilla, cobwebs, and a hint of smoke. Mid palate dries out a bit, and moves on to oak sawdust and spice fest. Clove, cinnamon, and white pepper. Thins out rather quickly and leaves a pleasant warmth after the swallow. There's a subtle lingering sweetness into the simple finish. Not bad, Its just underwhelming compared to their other offerings. -
Quite dark in color. Tarnish brass with strong amber hue sticky on the glass and a small number of slow-forming legs. Nose has plenty of green apple, burnt sugar, nutmeg and molasses cookies. Its rich with brown sugary goodness. Moderate viscosity and somewhat soft on the palate, its mouthfeel fits the smooth blend of rye spice and sweetness. This is a very oaky and sweet offering for a rye. Not a surprise given the 10-years it's spent in the barrel... It's big carmely, and sweet with hits of vanilla all over. As a bourbon lover, its right up my alley. After some time, the green, apple and rye spice re-emerges, along with a bit of eucalyptus. It's quite impressive how interesting the finish is. I may revisit this rating as im toying with a 4

Yellowstone Kentucky Straight Bourbon Finished in Tokaji Casks (2023 Limited Edition)
Bourbon — Kentucky, USA
Reviewed August 18, 2023 (edited February 2, 2024)Bright brass with a hint of caramel in color. Nose is light caramel, toasted white bread, creamed corn, barn funk and lemon cake with vanilla frosting. Soft on the mouth, its warmth emerges slowly and accelerates the spice notes behind it. The faint hint of dry roasted peanuts and their shells. Its very complex. An herbal quality comes through: rosemary wood, perhaps? A hint of maltiness sneaks through too. It's a rich sweet woodiness and earthy forest floor thing. Moderate length finish. This may be my favorite Beam product to date! -
George Dickel 8 Year Bourbon
Bourbon — Tennessee, USA
Reviewed August 15, 2023 (edited March 12, 2024)Vibrant, lightly tarnished copper color with a hint of amber. Pretty sticky on the sides of glass. First nose is a bit harsh, but underneath there's buttered popcorn, toasty caramel and notes of butterscotch. Sweet and initially soft on the palate, yielding quickly to a thinner mouth feel and dry oakiness that edges on bitter. I guess thats the Dickle tickle, just less well hidden than in the BiB offerings as of late. A good hit of spice comes through after the swallow as well as some baking chocolate. Its pretty drinkable. A good value these days at $36 -
Chattanooga Whiskey Experimental Single Batch Series Batch 031: Red, White and Blue Grist
Bourbon — Tennessee, USA
Reviewed July 24, 2023Dark copper in color runs off the glass fairly quickly with a lots of legs. Nose is corn (of course), with all kinds of wonderful malty notes, heavy caramel, prunes and tobacco leaves. Mostly sweet up front, it's balanced by a pleasant dryness mid palate that edges on bitter. Not at all unpleasant though. The finish on this is long and delicious Malted milk balls dipped in dark chocolate, burnt caramel and plum pudding. I'd say this is only set apart from outstanding by lacking nuance and depth that shows up somewhere between the mid palate and finish. This is an offering thats really in line with what I like! Great long finish... It's all there.. this is delicious -
Penelope Barrel Strength Bourbon Batch 12
Bourbon — USA
Reviewed June 10, 2023 (edited August 28, 2023)Brass in color with a bit of an amber hue. Legs are very slow to form, and very slow to move. Once they get going though, it doesn't leave much on the glass. Nose is light, with caramel, tart fruit (currants and underripe blackberries) and warm spices with undertones of malted grains. Hot on the palate right out of the gate. This comes from the proof, as well as the profile. Cinnamon and clove are all over, and a hint of white pepper all add up on each other. A bready sweetness lingers in the background and makes for a long and well balanced finish. Fine oak sawdust comes to mind, and a soft caramel chew. Naturally, a drop of water opens it up and slows down the progression of flavors. It does little to take the heat off the mid palate, though, highlighting the spiciness of this offering. Its a very solid bourbon. Complex and interesting with a medium - long finish. It lacks in richness and depth a bit and I am nonetheless satisfied!54.99 USD per BottleJeff's Spirits On Main -
Vibrant brass color, legs are few and form very slowly. Nose immediately reveals that layer of toasted oak common to other toasted barrel bourbons that I've had. There's a fresh, malty grain character here that almost borders on grassy or vegetal. Cornflakes and cracker Jack in there, too. Immediately soft and full, the sweetness that emerges comes through a bit of heat created by the combination of spice and proof. The sweetness lingers, and is balanced after the heat passes by dry oak and a waft of baker's chocolate. After nosing again a clove studded orange comes to mind. There's quite a bit going on in here, and thats nice. Its a little dry and a little rough around the edges. It is a solid value at $60, ill say that for sure.59.99 USD per BottleJeff's Spirits On Main

Dark copper in color, a faint hint of amber. Legs form slowly, and really sticks to the glass. Nose is light caramel, a bit of tart fruit, hint of eucalyptus, or maybe lemon oil, and a hint of barn must. There's a lot going on. Soft and thin on the palate, its never sweet, per se... but definitely reminiscient of dessert. It warms with spice shortly thereafter. Long finish, is dry with cacao, burnt sugar, vanilla and a return of the lemon and baking spices. Its complex, yet subtle, as far as 15-year-old bourbons go.

Redwood Empire Grizzly Beast Bottled in Bond Bourbon (Spring 2017 Vintage)
Bourbon — California, USA
Reviewed May 19, 2023 (edited May 20, 2023)Real sticky, the legs come slowly and it really hangs a sheet in the glass... Its a bright golden brass in color. Nose is caramel, toast, a very distinct fruity character, or herbal, or something. It's really interesting. Soft on the palate, it starts warming quickly, and the warmth continues to build. It's initially sweet, but only for a moment. It's well balanced throughout, and retains a character of very ripe stone fruit... Prunes more so than cherries. There's a bit of a chocolate note woven in on the long finish, as well as hints of s'mores or dark chocolate malted milk balls. This is complex, interesting, well-balanced, and delicious. It is nuanced without being subtle... This is really good. It's very different than a classic Kentucky bourbon, and that's not a bad thing!
