Reviewed March 7, 2025 (edited June 5, 2026)A fun whiskey, the age and proof give a lot of room to play around. Add water, add ice. This whisky can take it. It’s a canvass, explore the flavours that come out The whiskey needs some time to breathe when its first opened. Lots of ethanol on the nose. The nose is caramel, vanilla, cinnamon… maybe a hint of allspice. The palate is delicious. Creamy mouthfeel, warm caramel gives way to a peppery finish. Adding water brings out more vanilla and chilis on the nose. The palate is smoother with candied chilis. The finish again has more chilis. -
I imagine this whiskey to be right at home in a stable, right by the feed. I imagine the stable hands sharing a dram and the days trials and triumphs together. Hay and mild smoke on the nose. The palate is creamy, cinnamon, and slightly tart, like lemon curd on a Biscoff biscuit. The finish is smooth with a growing chili heat and warming peat smoke. Adding a little water… The nose becomes more… medicinal? Like hay and lemons. The palate remains creamy and the lemon becomes more pronounced. Almost like peaches. The finish is still a warming peat.

Reviewed January 11, 2025Warm peat smoke on the nose with just a hint of tum sweetness. Sweet palate with rum sugar. The finish is sweet and smooth, and then kicked with pepper and peat and a little chili. A yummy whiskey. Makes you want to sit and reflect. -
Like a warm summer’s day laying in the hay at a nectarine orchard enjoying a creme caramel. This wiskey has an inviting nose, a sweet palete, and an easy finish. Vanilla custard and hay on the nose with ripe nectarines. The palete is creamy with caramel sweetness. The finish is mild with oak and some heat. Tasted in a Copita glass.

Reviewed October 18, 2024 (edited October 20, 2024)This bourbon is like sitting down to a slice of Apple Cobbler while sitting outside in an apple orchard in the fall. Fresh tart fall apples on the nose gives way to a vanilla and oat pallet and exceptionally smooth finish which brings some heat, like black pepper and caramel. An exceptional value for the quality. My only wish is that it had a little more power behind the flavors. It’s all very smooth and mellow.25.0 USD per Bottle -
This whiskey is like a scoop of apple and vanilla Ice cream covered in chili caramel sauce and topped with a sprig of mint. Sweet caramel and mint on the nose. The palate is sweet and spicy warming up to a full creamy mouthfeel. The finish is a strong pepper and chili spice, fading as quickly as it stings. Adding a little water brings out a little more apples and mellows the finish.  Its a yummy whiskey and it has an especially fun mouthfeel!
