The nose starts with a soft mix of barely and honey wrapped in creamy oak. There is a floral element that is somewhat hoppy, showing some influence from the IPA finish that also shows a hint of green apple. As gentle as the nose it is, it is also inviting. The palate has a soft pepperiness to it as the smooth oak hits the corners of your mouth while barely and honey go over the top of the tongue. Touches of green apple sweetness swirl in and out, something you wouldn't expect from a whiskey that has been in contact with IPA influences. The finish is somewhat short with a lingering pepper spiciness that takes your focus away from the creamier notes that fade pretty quickly. As simple as this is, it is still quite enjoyable and a fun take on Irish Whiskey.

Reviewed December 3, 2022 (edited August 19, 2023)The nose starts off strong with a burst of floral rye spice with underlying notes of charred oak. As it breathes, it quickly opens up with leather, black pepper and touches of stone fruit, molasses and brown sugar. It is wonderful to keep visiting and very balanced considering it's age. The palate is full and chewy, quickly making its way to the corners of the mouth with floral rye and oak. Smooth vanilla follows it up along with brown sugar and caramel with just a hint of fruit sweetness. The sweetness comes just as the overall feeling begins to turn a little dry which in this case, the dryness adds to the experience. The finish is long and chewy with a lingering pepperiness along with charred oak, floral rye and a touch of creaminess. It stays wonderfully balanced through all stages of the experience, making it wonderfully tame despite being 18 years old. If anything, it could stand to be a little more intense, perhaps with higher proof, but as one of the few bourbons at this age available, it is very drinkable by any and all.199.0 USD per Bottle -

Reviewed November 13, 2022 (edited November 22, 2022)The nose starts softly with dry oak, vanilla, floral rye spice with hints of baking spices and brown sugar being faintly present. Notes of sweet banana gradually appears giving it it's unique quality. The palate starts off gentle but then opens up with a burst of baking spices, giving it quite a bit of heat, but in an enjoyable way. It is somewhat chewy with a little bit of richness, although the creaminess from the nose doesn't carry over too strongly. There is a bit of oak at the end of the palate, but this does feel a little one dimensional. The finish is long and spicy with a lingering heat and those faint hints of oak in the background. Not much to unpack with this whiskey, it is very simple but enjoyable to sip for those who prefer a kick of spice and heat. -

The dominant note is definitely that of sweetness with maybe the slightest hint of spice as it opens up. The palate is very soft gives way to oak, pepper and caramel apple as it sticks to mostly the middle of the tongue and the sides of the mouth, making the mouthfeel a shortcoming. It isn't thin or rich, but it also isn't memorable with how simple the palate is and a lack of evolution from it. The finish is medium and slightly astringent with the sweetness not quite carrying over, neither does the oak. Everything seems to be quickly subdued, although there is a lingering pepperiness. With ice or in a cocktail this might be alright, but served straight as a sipping whiskey, there is more to be desired from this.40.0 USD per Bottle -
The nose is hot but pleasantly full of dry oak, cherry, and floral rye spice. The heat quickly dissipates and gives faint notes of vanilla, cooked brown sugar and a touch of sweetness. It's delightful to keep visiting, building anticipation of the taste. The sweetner notes open up more and more as it breathes, giving way to toffee and cocoa for an ever changing experience. The palate is dry and somewhat chewy and slides its way into the corners of the mouth, filling it with dry oak, sharp baking spices and floral rye. The heat keeps any of the sweetner notes well into the background, but there is a faint, enveloping note of vanilla, cocoa powder, toffee and cook brown sugar. The finish is long and hot with a lingering rye spice with the sweetner notes of vanilla and cocoa staying chewy in the corners of the mouth. Toffee comes and goes with sweetness that helps manage the heat, and though it leaves the mouth dry, it is very much inviting to come back for more.

The nose has a hint of fruit sweetness mixed with vanilla and charred oak. As it breathes, the sweetness turns more into apple while all in all, it comes off as a simple yet very inviting whiskey. The palate is soft and gentle, yet coats the entire mouth with apple sweetness, charred oak and touches of vanilla, while a mild burst black pepper gives it a bit of depth. The finish is medium and softly peppery, with lingering charred oak doing away with the sweetness and vanilla. This is all rather simple, but done very well. Extremely enjoyable to sip, but the creamier notes of vanilla could stand to be heightened to take it to another level.

Creamy vanilla and oak splash across the tongue with hints of the brine swirling all about. The blend of rye with the port and scotch finish give it a very creamy, almost bourbon feel to it, but sharp rye spice reminds you that it is in fact a rye. It has the best of spice and sweet, giving you an incredible experience. The finish is medium long and peppery with a lingering rye spice while oak and vanilla stay around mid palate and gently fade. The finish leaves you wanting more, not quite enough to chew on but enough to leave a desire. Wonderful.

Knob Creek 9 Year Small Batch Bourbon

Reviewed September 24, 2022 (edited September 25, 2022)The nose is leathery and oaky with hints of smoke and caramel. A slight sweetness develops as it opens up which also gives way to the slightest bit of pepper, adding a nice balance to the sweetness. The palate works its way across the mouth and into the corners, leading with a wave of black pepper. The oak and leather is rather mild, giving way to the spice. Undertones of sweet caramel are present, but ultimately this whiskey is somewhat two dimensional. Still, for the age and price point, it is very solid. The finish is medium, somewhat short with a lasting pepperiness with oaky caramel that quickly fades.
