Jim Beam Single Barrel Bourbon 108 Proof
Bourbon — Kentucky, USA
Reviewed January 26, 2022 (edited May 11, 2023)A- amber in color. A bit sticky looking. S- sweet woody tobacco. A tinge of ethanol. Spicy banana bread. P- amazing. Onset is sweet wood, cinnamon, honey, earth in the middle. Nice spicy earthy finish. Truly delightful. M- the mouth feel/ consistency is what makes this so incredible. Medium heavy body. Attaches to your mouth and lets the flavors linger. O- I paid $30 for this bottle on sale and would definitely pay much more for it. I'm a small fan of the Beam specialties (DO, DC, BLK.) This is 10 levels above those. Well done. -
A- pale copper N- apricot, butterscotch, Banana bread, earthy. T- layered. Starts thin and sweet, apple and stonefruit. Middle is a bit of spice, pepper, wood, maybe a tinge of tobacco. Ends with a lingering long finish. Sweet spicy, and wood. The wood flavor is very nice. M- thin to medium O- not as dynamic as I was expecting but the balance between the rye and wood makes for a superb after taste.

A- dark gold N- wood, apple, spicy mint. P- apple, cinnamon, honey, wood, bits of light vanilla and caramel. sweet and spicy in a surprisingly complex rye. M- thin and light. Allows flavors to flash nothing sticks around to long. Finishes on the dry side. O- super impressive for a bottle under $30. This will not only be a delight to drink. It will keep your attention as there are alot of flavors flashing throughout. I seem to pick up on different things with each sip.

Knob Creek 9 Year Single Barrel Reserve
Bourbon — Kentucky, USA
Reviewed March 19, 2021 (edited April 5, 2021)Second bottle: A- golden amber N- fruity caramel. Cinnamon. Alchohol. red apple. P-sweet red hots, apple pie up front carmel and vanilla oak in the middle apple pie and some cooking spice on the back end mostly clove. Sweet throughout. B- oily but clean and light. Full not sticky. O- Wow! This one rocks. Strong flavors that keep up with the bite at 120 proof. This goes into one of my top 5 bottles of all time. This is so different from the first bottle. First bottle was alot! of oak and char. This one has all the beauty that I missed with the beast. Delightful. $36.00 @ Target I'll be investing in several bottles. Steal! -
A- gold/ light amber S-charred oak, carmel, vanilla, apricot T- blast of charred spicy oak. Then slight sweetness. Slight funky fruitiness. Finishes with a lingering tobacco, leather aspect. Some dark fruit. M-heavy body. Almost sticky. Coats the mouth for a looong finish. O- If you like oak char this is it. Would like a bit more subtle flavor profile but the oak dominates. Not much for vanilla, butterscotch or fruity flavors. Tame for 120P opens up nice with a cube. Seems like more time might develop better flavors. Lots of Oak!

A- light gold S- distant carmel apple. Cherry wood. T- red apple/banana bread. Slight carmel and vanilla. Bit of cherry.. Clean quick taste with fresh apple/oak notes that linger on the back end. M- light. Almost water like. You could almost say refreshing for a bourbon. I usually like some body but this one works perfectly a little thin. O- This is an absolute pleasure, lots of flavors. Not harsh. Refreshing. Reminds me of Weller with a smoother body, not as sweet and a bit less boozey. I will keep this on hand as a staple go to. Yum!

A-medium amber S- mild, earthy, tame smoke, mild dark fruit. Sweet leaf tobacco. Rubbing alchohol. T- mild spice for a rye. Followed by lots of earth and sweet grain. Fruity finish. Way more delicate and complex than I thought it'd be. Stands up well on the rocks. Superb mixer for cocktails. A good benchmark rye for under $30. M- pretty meaty base. Full bodied. O- worth its weight. Its a tad bit young to take on more of the late flavors of oak. The vanilla/butterscotch notes. It does have a special sweetness combined with a certain earthiness. Nothing off-putting. Well balanced for what it is. Not as spicy as many rye's. I enjoy.

Creek Water 100 Proof American Whiskey
Other Whiskey — North Carolina, USA
Reviewed December 26, 2020 (edited March 19, 2021)A- light gold in a cool bottle. S- grain. Corn, wheat, light barley. Kinda peaty or grassy. M- I drank this on a couple cubes. Silky smooth with no burn. Like drinking dirty cold water. T- Water, peat, fresh wood. Very earthy. Bits of limestone. Smooth no burn? This is like nothing else. Its not a sweet Carmely vanilla bourbon. It literally tastes like spiked dirty spring water. It's not bad tasting but will definitely not be normal to what people are used to. O- Tastes like what it says. Dirty water. Lots of earth, grain. The big surprise is at 100 proof the burn is there but subdued and fades fast. Something very different. Best chilled.
