Aroma- wintergreen, cinnamon, cherries, barnyard hay. Not overly complex but nicely balanced. Taste - picking up more rye up front and sweet corn on the finish. Little sticky.. great mouthfeel. Cherries coming up again here mid palate. Definitely a sweeter rye. Price point is great… not the most complex but really liking the balance and mouthfeel.

Aroma- oak vanilla some baking spices, toasted bread, slight hint of red hot. Nothing particularly unique. Nice balance though Taste - wow. This is nice. Super thick. Almost syrup like. Big sweet vanilla and sticky caramel. Oak. First sip was awesome. Second and proceeding sips, I get more fruity bumble gum notes, butterscotch and even slight chocolate. Very nice flavor profile. It’s a bit over priced at $70… should be around $50-60 tops. Worth a try but there are better options at its price point. 3.75-4.0 range for sure.

Reviewed March 5, 2022 (edited March 16, 2022)Aroma - berries and dark fruits are the first things I notice. Buttered toast. Caramel.. Faint oak and vanilla. Overall really nice. Expected more burn. Taste - man for 128.7 proof this one it’s surprisingly sweet. Big candy notes, citrusy, … finishes with oak and vanilla. Even slight hint of cocoa powder on the finish. Reminds me of nestle quick. Really liking how the flavor profile changes with each sip. Viscosity is great… long finish. 4.4… I’ll bump it to 4.5 -
Disclaimer- this is my third and final review of this whiskey. First rating was a 4.25 followed by a 3.0… Final rating 3.25 Aroma - apples, honey , citrus, kick of heavy rye bread on the back of end. Slight baking spices but I’m reaching now. Every once in a while I get a weird gummy candy note. Taste - meh.. candied fruits, black licorcie and mint. Mouth feel is quite thin. And finish is short and has a black licorice note to it and very malt forward. Heat is quite evident as well. Complexity is lacking Overall- I absolutely love Chattanooga but this offering at the $50-$60 price point is a hard pass for me. Drinks closer to $30-$40 to be honest. I havent done a side by side but OF Rye, Smooth Ambler Contradiction Rye, High West Double Rye, Rittenhouse Rue would probably beat this one out and are $35or less. If you are looking at the $50-$60 range… Rare Breed Rye, Stellum Rye, Pikesville 6 year are far superior.

Reviewed March 1, 2022 (edited August 1, 2022)Aroma- big peat and honey. Some cracked black pepper in the back, slight baking spices. Man… as this opens up.. it gets super complex… the smoke is still there but now I’m getting tropical notes and tons of caramel and vanilla. Very interesting Taste- Wow… extremely thin mouthfeel but extremely long scotch finish. There was nothing upfront… mid palate is sweet fruit, salted caramel, baking spices, cinnamon then the finish is all Smokey scotch slight heat from the alcohol as well. Feels a bit hotter than 95 proof. Overall- Not a huge fan of peated scotch, but this is honestly fantastic. It’s got just enough sweetness from the oak and vanilla in the bourbon (mixed in with some spices) and just enough smoke on the finish to make this a terrific marriage. Very unique and absolutely worth seeking out. Great for those who are interested in Scotch and great for those who are looking for something new. The 95 proof is a bit interesting… the thinness was to be expected at 95, but the heat on the finish seems like it would be north of 100. -

Reviewed February 18, 2022 (edited February 25, 2022)Aroma - for $30 the oak and peanut butter presence on this is quite impressive. Faint hints of pepper, caramel, cinnamon and baking spices. Subtle sweet cherry note in the background as well. Very nice. Taste - peanut butter, vanilla and oak with spearmint rye spice. Lots of heat comes through creating a bit of “roughness around the edges” … Overall- i originally gave this a 3.25 when I originally it back in Feb 2022… i couldnt have been more wrong. This bottle is exceptional for the price. Flavors are very bold and in your face and I’m a huge fan. -

Reviewed February 17, 2022 (edited May 9, 2022)Aroma- nice balance of rye and oak. Getting a slight dark fruit note, caramel and apple. Hints of hay.. Solid but nothing to write home about. Taste - a bit perplexing. Unique first sip…Rye and cherries come to mind… Proceeding sips, spearmint and caramel come forward… little herbal notes… Comes in a little on the harsher side with the heat. Most will probably prefer a cube or sphere to open it up. Overall—- this is a barrel strength which price point is normal for… but honesty it’s over priced and by quite a bit to be frank. $15-20 at a minimum based on flavor alone… I really hate to be negative on any new distillery but this bottle is nowhere near its price. There are just simply too many better options than this at the price range. … Rare Breed Rye or Willet 4 year are insanely superior to this… Hell… Redwood Empire Lost Monarch far superior and that one comes in around $30. -

It’s nice for the price point Taste - more sweet notes of honey, vanilla, and caramel. Slight touch of berries and toasted oak. Getting an herbal note coming through as it opens up… For the price, it’s quite a bit of complexity. Overall - the mouth feel is quite thin at the 101 proof. Hot finish. But overall this is really solid for the price point. Above average at $22-$25 ranges. Great for cocktails too. Definitely a great go-to everyday sipper -
Aroma- holy crap… I got a splinter up my nose from the massive oak profile. Seriously… I can smell the oak as it sits on my end table. Once I get passed the oak, it’s predominantly smoke. I’m really reaching here, but I get a dark fruit and maple. Amazing aroma. Taste - oak and smoke are the big guys here. But the secondary notes really make this one nice. Herbal tea, caramel,leather, sap honestly comes to mind (like pine)… Overall- Incredible… the finish is super long for 89.5 proof. And I only wonder just how orgasmic this would be at a higher proof. But I’m gonna still give this a 5… because it is a lower proof bourbon. I don’t usually come across something that is this aromatic and flavorful at this low of abv… It’s absolutely tremendous.

Reviewed February 14, 2022 (edited February 15, 2022)Aroma - apples, pepper, oak, leather, really awesome nose. Taste - first sip and it’s mind blowing. Just a super decadent beverage. Tons of sweet notes cuts out all the heat. Layers upon layers of caramel and vanilla. Tons of mixed berries… blueberries, blackberries come to mind. Creamy finish. Dammit this is amazing. Complexity is insane. Damn. This is just an unreal whiskey. At 67.45% ABV it drinks like it’s 50% ABV. Massive thanks to my buddy for providing the sample. Had a Willet 25 year many years ago and that was my all time favorite… this offering is just as memorable.
