Nose is fantastic. All the floral corn with sugary notes. Simple and beautiful. Palate is light but spicy. Sweet dark honeysuckle with cinnamon and the sharp tanic of oak. Finish is long with some more oak, blackened brown sugar, and a medicinal note almost like an isla. One of the best bourbons for sure.

B02/100. The first few drams of this bottle I was ok with, but not impressed. Sticking to my rule of making it halfway through before judgement, it has grown into a great whiskey, if just a bit to sweet for my normal taste. Nose is beautiful and sweet. Lots of darker floral and sugary notes with cinnamon and spice woven in. It does have some ethanol heat though, it's just that the notes are much stronger. Palate is a dessert. Sweet burnt caramel and cinnamon from start to finish. Some depth in the long finish with dried fruits and spices forward. The extra oak is hiding right between the notes and gets stronger towards the finish. Overall it's a great experiment and worth a try. I don't usually like sweet whiskeys but this was great. A touch of water turns into a toasted marshmallow.... definitely a dessert whisky!

Noble Oak Double Oak Bourbon
Bourbon — Kentucky, USA
Reviewed July 25, 2022 (edited August 24, 2022)Nose is sweet and floral. Woody notes do come through. Palate is more sweet and floral with brown sugar, cinnamon, and light fruity/nutty notes. Think darker dries fruit and nuts. Finish is medium but a bit astringent. Not bad, just a bit bitter for my taste. Overall it is a decent bourbon but not the best sherry finished I have had. On follow up visits this has a sweeter nose and finish. It is bit thin and brittle though. -
Nose is typical wheated bourbon, but a little weak. Typical is earthy: grass, wet stone, dirt smell after rain. Has the corn and dust of a young bourbon, wheat just smooths out the sharpness and sweet notes for me. Palate is again typical wheated bourbon but an almost stale(?) Note. Finish is moderate but still with the stale note of a mildewy barn. I have revisited this one several times and just don't care for it. There are other spice notes and a few complex parts but the odd end and finish just don't let it become enjoyable for me.

WhistlePig 6 Year PiggyBack Rye
Rye — (bottled in) Vermont, Canada
Reviewed June 20, 2021 (edited September 30, 2021)Nose is sweet and spicy, with the sour of the rye grain right up front. Notes of sweet tea and eucalyptus as well. Palate is almost like everything I expect in rye, but turned up. It's like liquid rye bread. Spice, menthol, eucalyptus. The finish is all mint and menthol. It's a good rye if they are what you are in to. -
Chattanooga Whiskey Cask 111
Bourbon — Tennessee, USA
Reviewed June 20, 2021 (edited December 16, 2021)Nose is spicy cinnamon, tart cherry, oak even though I don't think it's super old, and the dusty sweetness I get from wheat whiskey. The high malt comes out more on the palate but the front is still spicy sweet cinnamon and cherry. Sugared wood. The soft velvet sweetness of the malt then comes forward. It's still reminding me more of a wheated bourbon though. The finish is long and pleasant with the dusty sweetness. I really like this one and it's one of my favorite bourbons when I'm in the mood for the stronger spicy sweet flavors. Water softens it and makes it all brown sugar and cinnamon; a dessert bourbon! -
Balcones Texas Single Malt
American Single Malt — Texas, USA
Reviewed May 4, 2021 (edited December 10, 2021)Nose is strong, rich, sweet, and dense Dried dark fruit, wood, rubber. Old leaves and a dustiness comes out after a few minutes. Palate is strong and rich sweetness. Dark fruit that is dried and the sugars condensed, poured over old varnished wood and well worn leather. Some medicinal iodine notes too. Every part of this dram is dark and rich. The finish is long and oily. Sweet woody notes with iodine. Some water opens it up with a lighter sweetness, but I honestly prefer it at the denser ABV. -
Angel's Envy Bourbon Finished in Port Wine Barrels
Bourbon — Kentucky, USA
Reviewed April 19, 2021 (edited September 30, 2021)Nose is sweet and fruity, I'm guessing that's the port. Some wood and spice too though. The sugar reminds me of the flaky sugar on top of a baked pastry. The palate is delicious and reminds me of the toasted sugar on a turnover with just a bit of the cherry jelly on the bready part. That develops into some spice and wood. The nose and palate spice are for sure cinnamon but I'm not sure what else. The finish is spicy and woody and lasts a respectable time. Overall good dram and worth the try. -
Kilchoman Sanaig (2016 Edition)
Single Malt — Islay, Scotland
Reviewed April 13, 2021 (edited September 30, 2021)Nose is sweet cereal and candied fruit. Some darker earth and leather notes after it settles. There is some smoke like from the inside of a cold grill. Palate is river stone, iodine, smoke, sweet dried fruit. It develops slowly and those flavors keep going around and around each other. Very enjoyable dram. The back and is smoky and sweet that lasts into a long smoky finish. Some water brings dark cocoa on the nose and the palate gets a bit darker and adds deep dark chocolate and coffee notes that last well into the finish.
