Last pour of the 2021 bottle tonight. Loved this thing, it needed to be memorialized.
Nose: chocolate, leather, toasted oak, cinnamon, bread,
Palate: so much red fruit. Followed by rye spice and brown sugar. So beautiful in its progression.
Finish: long with leather and rye spice
I will miss this bottle
Sweet notes of candied red apples, berries, plums, cherries and crème brûlée. Woody and cedar notes appear that bleed into a spicy cinnamon. That high rye bill is showcased running hot and dry with notes of menthol and tobacco. Through this all, there is a slight chewy molasses undertone. Would have liked the body to be a bit thicker but excellent nonetheless.
This is what I’d imagine Christmas smells like in bourbon form. Warm cinnamon and vanilla on the nose with rich caramel and hints of orange citrus. The palate is spicy and warm, and as the heat fades it showcases a pleasant fruitiness with some oak and dry peanut flavor.
