Knob Creek 9 Year Small Batch Bourbon

Reviewed July 8, 2023 (edited July 10, 2023)On the nose i get vanilla, tofffee, and dark cherry. On first sip there is a HIGH amount of burn theoughout. Ive had better 9+ year statements. This is very spicy upfront like a wheat or strong rye. Im supriseed and wasnt expecting what i got out of this. The flavors were mostly disguised by the heat. Ice removes most of the burn and opens up more of the original toffee and dark cherry. This is not going to be an everyday sipper for everyone but if you like spice this is for you. -
On the nose I get vanilla, oak, leather, nuts, and a tiny himt of chocolate and char. First sip offers a full mouthful of black pepper, oak, and char. The burn wasn’t overpowering and had a nutty, leather, and char finish. Ice softens the burn but does not remove it and pulls the nutty and earth tones to the front. This is a really good bourbon and i highly recommend it.

On the nose i get fruity and chocolate notes. First sip is not overpowering offers more bourbon notes like learher, oak, and char. I didnt get too many rye tastes but there is some black pepper notes and aftet taste. Ice softens this to the point of dulling everything. Not a bad offering but not an instant classic.

On the nose i get certain amount of sweetness and caramel. First sip isn’t overpowering. The burn of black pepper is there but quickly released. Peacan is subtle in the finish. The linger and full body is slightly longer than most. There is a bit of dryness after-feel in the mouth similar to a dry wine. Ice doesnt chang flaor profile, only softens the initial burn. Pretty good for a sipping whiskey.

On the nose i get notes of butterscotch and a sweetness undertone (like a cane sugar). Fisrt sip has all the indicators of a true rye. Black pepper, clove, char, and a slight oak feel. Full mouth burn and at 100 proof this one has all the feels. Ice cube doesnt change profile but slows the black pepper. After ice its soft at first but intensity and burn returns quickly. Good but not great for me. Im not big into full burn whiskey but i know there are those who love it.

Reviewed May 20, 2023 (edited October 27, 2023)On the nose there is a pleasent vanilla bean and apple pie. First sip has oak, leather, and char of a good typical bourbon. However the complexity of this first statement is way bette then expected. There are hints of pine nut, honey, and black pepper. Ice doesn’t change much and still offer same good tasting notes. I genuinely surprised how good this is for this being the frist batch from this new distillery. Try it if you can find it. -

Reviewed April 8, 2023 (edited May 5, 2023)On the nose I get a clear distinct arroma of cream soda. On first sip I get further cream soda and vanilla notes. The finish offers subtle oak an char with undertones of leather and pepper. Ice softens the peppery notes and keeps some of the complexities. Good offering and recommend if you can find it.
