Nose is of stewed apples and pears with green apple skins, strawberry hard candy, and soft caramel. Taste is initially apple and pear Jelly Belly, then going on to vanilla barrel spice. Then moves on to the nuttiness of a pecan nut praline cookie before finally finishing with raisins and cocoa powder. Has a surprisingly long evolution and more of a burn than would be expected of its 51.4% abv. BTW, with a touch of water, it goes straight from fruit to chocolate. It is less complex but no less delicious.89.0 USD per Bottle

Cardenal Mendoza Solera Gran Reserva Brandy de Jerez
Spanish — Jerez, Spain
Reviewed February 28, 2021 (edited October 28, 2023)Nose is almost rum-like: toffee, brown sugar, some banana, deep dried fermented grapes and figs with some nuttiness, reminiscent of a fig newton. Texture is thick and smooth, with taste of cocoa-dusted fig newtons battling with rich raisiny sherries. The sensation of the alcohol itself hits late, slowly coating the throat like a rich old-timey cough syrup. Finishes with a touch of mint. Very good! Punches WAAAY above its weight for 40% ABV. I want to drink this when I'm sick. I think it'd do a better job than Robitussin.49.0 USD per Bottle -
Method and Madness Single Pot Still Finished in Chestnut Casks
Single Pot Still — Ireland
Reviewed February 24, 2021 (edited May 22, 2021)Nose is of caramel-soaked pears, buttery shortbread, ripe papaya, with some holiday nuts in a hard brittle. Upon tasting, it is creamy, initial hit of fruit punch, fruit leather, soaked raisins. It tastes pretty darn tropical. Very delicious. -
Nose is bubblegum, some ripening papaya, and a bit of apricot. Took a while to open up on the nose, surprisingly. Tastes intensely perfumey with some nutty, caramely corn syrup like the goopy bits of pecan pie. With a bit of water, the nose is just that of a middle of the road bourbon, as is the palate, albeit with the addition of a pop of perfume right at the start.

Nose is very medicinal with soaked raisins. Pruny. Very dry, dusty, typical Balcones. Tastes of stuff your grandma swears is good for you, then sweet tobacco, resolving to a warm, deep leather taste. Feels like this should be had with a cigar, followed by a ruby Porto. Not your typical rye. You need to be in the right mood for it.

Woodinville Straight 100% Rye (90 Proof)
Rye — Washington, USA
Reviewed January 28, 2021 (edited January 22, 2022)Nose is of Hot Tamales-like cinnamon, dense floral notes, strawberry fruit leather, and cedar. Palate is of lavender, leather, not too sweet, some frondsy plants, well balanced. Finishes with applesauce. Very good. Makes me wish I had cask strength.40.0 USD per Bottle -
Nose is of canned pears with a light, thin, brittle agave note and a touch of jammy dark fruits. Taste is honey, apples, and just a hint of vegetal smoke. The agave increases in the finish. Nothing very weird, ultimately, but still very pleasant to drink. A fuller body would really bump up this scotch.20.0 USD per Bottle

Nose is very much of burnt sugars, almost reminiscent of a Jamaican rum. Also notes of apricot, plum, honey, and thoroughly stewed and spiced apples. It tastes sweet, with stewed raisins, warm spices, and a crackeriness somewhere between a cinnamon cookie and a s'more. Finishes with juicy raisins. Has this undercurrent of that dry, toffee, burnt sugar and tobacco taste I associate with Balcones. The ex-bourbon barrels come through very prominently. Not your typical single malt. Instantly recognizably Balcones.
