*** SALSA *** Nose - Wow that is some deeep cherry. Little barrel spice. Maybe some toasted oak lingers but that is just a cherry bomb on the nose. Palate - Now this is a bourbon. Nice oak and leather with some light vanilla notes. Some nutty notes come forward strong in the mid palate. Theres some chili spice (little deeper than cinnamon) but its not overpowering, just complimentary. Finish - The nuttiness and the bitterness from the oak and leather is what sticks around. Also that cherry kind of comes back on the finish.

*** NO WAY HOME *** Nose - Got loads of cinnamon and baking spice off the nose. Theres a massive sweetness that accompanies the spice, like a vanilla bean. Theres definitely some toasted leather in there. As it opens some grape and pear start creeping through. Finishes with a scent of black licorice, very complex and fun nose. Palate - Okay that is very very herbal. How is this not a rye? no idea. Definitely more of that black licorice, some cherry and more leather. Not much oak, as this drinks thin. Some cinnamon lingers but lightly, not as overpowering as it is on the nose. Thats just about it. Very good but very interesting for it being a bourbon. Finish - So the finish is kind of a lighter version of the palate with the leather and cinnamon turned up a little. Pleasant, not harsh and drinks exactly at its proof.

Reviewed August 8, 2024*** CHRIS FLETCHER PICK 2021 *** Nose - Thats a nuttier jack nose. I like it. Feels more complex. Palate - Ooo nice job fletch. This is nice. Definitely more oaky and nuttier than a normal sib bp. Def has some sweeter apple notes that are dancing around that proof. Its done like a classic bourbon almost thats high proof. Finish - Lots oak and cinnamon at the end. Has some vanillas but its light. This is a solid one i like it. -
*** 59.10% D Barrel *** Nose - Smells like tobacco, light mint, leather, some honeysuckle. Palate - Very savory, smokey, some honey and herbs are there as a rye. Reminds me of a salty sweet ham. Its very good but you have to like very savory drams. Finish - Very much a light version of the palate. It becomes more herbal as we go.

Reviewed July 28, 2024 (edited July 30, 2024)Nose - Some light grape, pear, peanut brittle, caramel, double oak with a deep deep char, not smoky tho. Palate - Some soft vanilla coats the tip of fhe tongue. Brings lots of cinnamon and making spice that goes together with that vanilla. Some nuttiness lingers around. The ethanol is pretty strong though and comes through more as its opened up, which is odd. Finish - Pretty much lots of oil, cinnamon, baking spice. Lots of warmth goes down. Makes it feel hotter than it is. -
*** 11 *** Nose - Nice minty herbal note. Some caramel and vanilla. Palate - Same as the nose. Super chewy very nice. Lots of barrel spice and cinnamon thats complimented by the vanilla.
