The Alambique do Jeca is located in the city of Itatiba in the state of São Paulo. The label informs that cachaça has been produced since 1958 but the producer's Instagram doesn't bring much information about the cachaça and I couldn't find a website. The producer's story began 30 years ago, in a historical scenario for Brazil: the Fazenda Santo Antônio das Pitangueiras, whose headquarters, from the time of the colonization of Portugal, is a mansion built in 1715, which was completely restored by the couple José Otávio de Carvalho Lopes and Rosana Romano, owners of the Farm and the cachaça brand. On the farm, the Alambique Santíssima was built, which started to produce two different brands: Cachaça Santa Romana and Cachaça Bem Me Quer. The quality of the drinks was so high and their flavor so attractive that both brands already came out with the “seal”: export standard, and were directed, firstly, to the foreign market. The cane is cut manually, without burning the leaves. After cutting, the cane is cleaned and chopped in the cane field itself, going to the mill, where the grinding takes place, which is always done on the same day as the cut. Arriving at the mill, the sugarcane juice (garapa) is extracted, where they are made, decanted and filtered. The broth with the appropriate “brix” (sweetness) goes to the fermentation vats, where it is fermented by selected yeasts, which convert the sugar into alcohol. The stills are made of copper and the distillation is fractional, that is, only the “heart”, that is the best part of the must, is used in an artisanal process, which ensures the quality of the product. Part of the production is stored in different types of wooden barrels: oak, balsam, amburana, so that it has a period of rest (ageing). And the other part rested in stainless steel vats. Master Blender Armando Del Bianco makes the blends of cachaças from Alambique Santíssima. Combining different woods, with their particular sensory characteristics, Armando adds elegance and sophistication to the new phase of still cachaça. White cachaça with the quality and flavor of the “heart” which is then stored for 6 (six) months in stainless steel vats. Notes: Crystalline appearance, reveals the purity of an artisanal cachaça.
