During the period of colonization, cachaça was a drink consumed by farmers and drovers to relax after a hard day's work or to help ease the harsh cold in the region of Santa Rita de Caldas, in the south of Minas Gerais. Often, it also served to animate the circle of friends. At that time, the distillate was seen as a popular and extremely strong drink, but it was adopted as the region's favorite. After years of research and a rigorous selection of raw materials, always focusing on not losing its roots and preserving ancient traditions, Cachaça Prosa Mineira emerged in 2010, which brings sophistication and quality as sensory characteristics. No wonder she has been awarded 26 times. In the still, the entire cachaça manufacturing process is done by hand, with all the care and attention necessary to produce a quality distillate with a unique personality. Control of all variables is in the hands of the producer. Thus, when the consumer receives Cachaça Prosa Mineira, he can not only taste a quality drink, but feel the care of the whole process. When we talk about quality, we refer mainly to the right choice of the main raw material for cachaça: sugar cane. For this reason, the still has a nursery for seedlings and planting, as they believe that quality comes from the cradle. The sugarcane maturation process to obtain an ideal brix standard (sugar content) for fermentation, in addition to cultivation in favorable climatic and soil conditions, are factors that directly influence the final result of the cachaça. Cachaça do Anjo is aged for approximately one year and six months in barrels of balsam, amburana, American oak and European oak. This very high quality blend features integrated alcohol on the nose and an explosion of fruity and woody aromas with hints of caramel, almond, honey, vanilla and chocolate. On the palate softness and an incomparable sensation of flavors present in the taste buds. It is no wonder that Cachaça do Anjo won medals in all the contests it participated in in 2018, including the Silver Medal at the Brussels World Contest and the Gold Medal at EXPOCACHAÇA, the Vitrine Mundial da Cachaça, where it was considered and elected as the BEST WOOD BLEND IN BRAZIL. Cachaça Saliníssima has been produced at Fazenda Matrona, in Salinas, in the north of Minas Gerais, since 1955, when Olímpio Mendes started to dedicate himself to planting sugar cane, which was used for the production of cachaça and rapadura. The drinks were bottled and sold in the house, to farm employees, neighbors and friends. Rapaduras, on the other hand, were sold in the city on Saturdays, after traveling a long distance in an ox cart. In the production process, Alfredo Mendes de Oliveira, son of Olímpio, was responsible for transporting and grinding the cane, while his father was dedicated to the fermentation and stilling of cachaça. At the end of the 1990s, Alfredo and his son, Lucas Mendes, took over the farm, continuing the tradition of artisanal production, both for distillates and rapadura. In 2003, the mill underwent improvements in structure and equipment, but without losing the artisanal essence in the manufacture of cachaça. Today, continuing in the Olímpio family, Fazenda Matrona continues to be one of the important cachaça producers in the Salinas region. Cachaça Saliníssima Prata follows the traditional recipe of rustic yeast, using wild yeasts and natural substrates during the fermentation process. Stored for six months in stainless steel barrels, it has an alcohol content of 40% and is ideal for preparing caipirinhas and drinks. Aromatic, alcoholic, evident cane sweetness.6.0 USD per BottleMineiro Tropeiro

With the drastic changes in the climate, where the periods of drought and rain have become unstable, Destom has put together a strategy using sugarcane as an energy reserve in case of extension of the dry periods. This made it possible to increase the number of animals per unit of pasture area. From there, it was a leap to set up the distillery and close the sustainability cycle on the farm in Faria Lemos, Minas Gerais, in this consortium of beef cattle, sugarcane and cachaça. The producers started the project in 2014, with a high-tech model still. Cachaça Primeira de Minas Silver 750ml is a beverage stored in stainless steel barrels. White cachaça, light, has an alcohol content of 39%. With mild aromas and clean distillation, it is soft in the mouth and ideal to be enjoyed in shots and in the preparation of drinks and cocktails. In 2014, country singer Leonardo released the CD and DVD called Cabaré. With the success of the album, the Cachaça Cabaré brand emerged, a drink with an alcohol content of 38%. The distillate is a partnership between the musician and the Dom Tápparo mill, from Mirassol, São Paulo. This still that produces Cachaça Cabaré is called Don Tapparo and came about on the initiative of Mr. José Tápparo, who in 1978 decided to produce cachaça for his own consumption and as a gift to friends. The drink was so successful that connoisseurs started wanting to buy it. It was then that he saw a business opportunity in this activity. Over the years, and the entry of the sons Ademílson and Carlos in the company, the mill grew and began to produce various types of cachaça, alcoholic cocktails and liqueurs. Today, the company has the collaboration of the third generation of the Tápparo family. All cachaça production takes place on the family property, from planting the sugar cane to grinding and distillation. Aging is done in European and American oak barrels, as well as other woods such as amburana and peanut. Stored for 6 months in Peanut wood barrels, which does not provide color, it is a light cachaça, marked but balanced alcohol, natural sugar cane sweetness, ideal for cocktails such as the "caipirinha".
