ABS Minas partner, Ingá mineral water, kept all participants very well hydrated. In a blind tasting, peated examples of 4 different single malts and 1 guest blended malt were tasted. There isn't much information on the internet and the producer's website doesn't help at all. Apparently, cachaça is stored in jequitibá, amburana and oak barrels. This means that, according to Brazilian legislation, standardized cachaças must have the identification on the label: “standardized and bottled”. When the entire cachaça production process is carried out in the same production unit (planting, grinding, fermentation, distillation), the label will say “produced and bottled”. Owners of standardized cachaça brands do not carry out all the production stages and buy cachaça provided by third parties. Therefore, they do not necessarily need sugarcane fields, fermentation vats, distillation units or aging. Generally, these cachaças acquired from third parties have distinct aromas and flavors and it is the role of the standardizer to carry out procedures that leave these cachaças with the same final flavor – hence the idea of standardizing. Some techniques are used to achieve this standardization, including the redistillation of cachaça in copper stills and storage in wooden vats. This process was due to the need to produce a greater volume of cachaça. In short, this cachaça has an artisanal identity but its soul is industrial. But it wasn't always like that. .Cachaçaria Asa Branca was born in the 1970s, in Salinas, in the north of Minas Gerais, built from the passion that Joventino José de Queiroz had, as he was a great connoisseur of the drink and knew like no one else the secrets of how to distill a quality cachaça . He produced the drink as a hobby, since his main activity was livestock farming. One day, on a Sunday afternoon, drinking an aged spirit with friends, he realized that he needed to register his still and build a brand. If his second passion was music, at that moment he was playing the song Asa Branca, by Luiz Gonzaga, on his record player. Thus, Cachaça Asa Branca was born. After Joventino's death, the business was almost discontinued, but the family sold the company, which to this day shines in the Craft Cachaças market. Cachaça Asa Branca is manufactured in the heart of Salinas, 13km from the city center, at Fazenda Luar do Sertão.
