Cachaça Aviador was a gold medalist in the twentieth Brazilian Wines and Spirits competition (2021) and voted best in the London Competitions (2022), in which it won a gold medal. They have been sugar cane producers since approximately 1850 in Serra da Ibiapaba in the state of Ceará, with pioneers in the production of artisanal organic cachaça and sustainability in production. The production of cachaça aviador is unique due to the combination of all the knowledge about the manufacturing process, which ranges from soil preparation to bottling, with the mild climate and favorable soil of Viçosa do Ceará. Furthermore, the raw material is grown organically and manually, which guarantees high quality in the final product. In April 2024, the Brazilian government, through the National Institute of Properties, granted the registration of Geographical Indication (GI), in the species Indication of Origin (IP), for Viçosa do Ceará, which is a production center for this cachaça . The region is now alongside the most famous in Brazil in the production of cachaças alongside Salinas in Minas Gerais, Paraty in Rio de Janeiro, Abaíra in Bahia, Morretes in Paraná and Luiz Alves in Santa Catarina. Reviewed September 29, 2024Cachaça Flor das Gerais is produced in the municipality of Felixlândia, in the Central region of Minas Gerais. The first still was founded at the beginning of the 20th century by the family patriarch, who led production until the 1940s, when the craft became the responsibility of one of his three sons. Information: Aged for at least 24 months in Oak (Quercus sp). We started using American and French barrels, which brought different aromas to our product line, back in 1990 and the cachaça aged in them is still a favorite among consumers. Color: Translucent, Straw Gold. Body: Intense and moderate yellowish shine. Moderate/high oiliness with the formation of dense and well-defined tears. Aroma: Strong presence of spices such as cloves and cardamom followed by a sweet aroma of vanilla with notes of nuts and sweet banana. Intense woody, low acidity and balanced alcohol. Mouth: Complex and velvety. It starts with a medium sweetness that highlights notes of vanilla and molasses, ending with a striking, dry and long-lasting woody aftertaste. Low acidity and bitterness.
