Nose is cherry cola, milk chocolate, baking chocolate, tobacco leaves and a memory of church pews... Soft, sweet, and oaky... This is really a solid Tennessee whiskey with some extra nuance. It's really awesome. The best of high malt whiskies and bourbon all rolled up into one drink... -
Chattanooga Whiskey Bottled in Bond Bourbon (Spring 2018 Vintage)

Reviewed July 15, 2022Tasted at the experimental distillery in Chattanooga, TN. dark amber in color, medium number of slow forming legs. Nose is green apple, burnt sugar, vanilla frosting, semi sweet hay and the ever-present maltiness that's the flagship of this distillery. Thin and warm on the palate, this one really carries a wallop of caramel, with malted barley, buttered toast and coconut. The finish is long and nuanced. It's excellent. -
Dark straw in color with a hint of Amber. Slow forming, but plenty of legs. Nose is bright, tart and fruity .. candied apple and herbal notes with fresh stored straw. Soft and grassy, it is incredibly well balanced... The dry oak and rye spice are matched by the light caramel/creme brulee and the finish is long and interesting... It's a great dance between the mash bill and the barrel.

Reviewed July 15, 2022 (edited December 11, 2022)At the distillery. Darker copper color, absolutely hangs on the glass. Only two or three very slow moving legs. Nose is loaded with baking spice and a hint of eucalyptus. Tart cherries, stewed apple, a hint of vanilla... Much softer and instantly warming on the sip. Finish is medium length with lots of complexity: chocolate, dark caramel, baking cacao and prunes. Faintly reminiscent of a German chocolate cake eaten in a sawmill. It's really good... Far more complex and interesting than the 91. -
At the experimental distillery in Chattanooga. Tarnished brass in color, lots of medium speed legs. Plenty of caramel on the nose with toast, Asian pear, tobacco and bulk grain mustiness. Soft, but thin on the palate. A dry but pleasant woodiness comes out mid-way, followed by a short -medium finish with corn, more caramel and a bit of warmth from the rye spice.

Hand selected single barrel pick from Jax liquors in Chattanooga Tennessee. Sticks quite tightly to the glass. Only a few slow appearing legs. Nose is a little hot, shows plenty of rye, and quite a bit of barrel for something with a 3-year age statement. Creme brulee, green apple, flaked barley or rye from the bulk bins at the co-op, and a faint hint of eucalyptus come out through plenty of fresh hewn white oak. Front is initially sweet, but the heat builds and moves quickly to the barrel and the rye spice. The early part of the finish is almost bitter and woody before trailing off with caramel, vanilla, clove and cacao It is soft on the palate, although a bit thin. The mouthfeel and the finish improve nicely with a bit of water... It brings out a good bit more sweetness, and stretches out the sip a bit. At 40 bucks, I can't be disappointed in this at all. It is an excellent value. That said, it's young, and that's definitely apparent... they're doing something right though, and I'm willing to stay tuned I'll try it in an old fashioned, for sure.39.99 USD per BottleJax Liquor Store

Golden straw in color, runs off the glass pretty quickly, but leaves a nice ring. Nose shows a good shot of rye, and the wheat behind it. Hay, spice, and a hint of citrus peel and green apple (gotta be an MGP distillate). Soft, a bit sticky on the palate, and sweet throughout, it's got good balance for a younger (no age statement) bourbon. The barley makes itself known on the mid-palate, reminiscent of a rich highland scotch or syrupy Irish whiskey. A bit of warmth, assumedly from the rye, follows vanilla, milk chocolate and a faint hit of mint.The barrel comes through near the short-medium finish, with some nice contributions from the wood and the char. Dangerously easy to drink... with a campfire and a couple of s'mores, it could disappear in a hurry. What it lacks in depth and complexity, it makes up for in drinkability. This is a solid summer drinker and I'm grateful that Corey hooked me up!

Yellowstone Select Kentucky Straight Bourbon

Reviewed June 17, 2022 (edited August 3, 2022)Golden straw in color, with a hint of copper. Runs off the glass in sheets, leaving a few legs to run behind. The nose is exactly what I've come to expect from almost everything Beam: peanut brittle is the first thing to come to mind, followed by toffee, rye, lemon peel, and a hint of vanilla. The well-balanced front is reminiscent entirely of peanut. There's roasted peanut shell, peanut brittle, and dry roasted peanuts. It's soft on the palate, with plenty more warmth than the proof would imply. There's almost salty character as it drifts off into the finish. I get dry wheat toast, burnt sugar and lots of oak. Overall, it's light in color, in mouthfeel and in the deep barrel char/sweet notes that I've come to prefer... So although it's not my favorite, it is pretty darn good for having picked it up 20% off at $31.99, and is a fine summer bourbon. I'd imagine it'll make a great long drink, or an OF on the rocks. -
Old Rip Van Winkle 10 Year Bourbon (107 Proof)

Reviewed June 11, 2022 (edited June 12, 2022)Really sticks to the glass .. a few slow moving legs. Nose is dominated by the wheat... Caramel, vanilla and a hint of mint or eucalyptus... Front is strikingly well balanced between sweetness, spice and oak. Soft, sticky mouthfeel really coats. Solid, long finish, is mostly sweet but brings out toasted oak, honey and creme brulee. It's really neat having been able to try various years of this offering, as it's definitely the same "juice" going in... Amazing to experience what additional aging does to it. This one is wonderful and easy to sip. All the right notes are there, and in a wonderful balanced way. -

Reviewed June 10, 2022 (edited August 16, 2022)Tarnished but vibrant brass in color. Few, but fast moving legs leave strings of beads behind on the glass. Nose is loaded with barley grain, but the wood makes its presence known too. Honeysuckle, vanilla, buttered white bread toast and conditioned leather. Front is sweet, mid palate has a nice warm spice and warm sweet grassy note. Finish is medium to long with burnt sugar, caramel, milk chocolate covered peanuts, and nougat. Overall, this is interesting and delicious. It's subtle by my personal preferences, but doesn't disappoint. It's a whiskey I'll be proud to share with any highland scotch or Irish whiskey drinker!
