This bourbon has a delightful nose rich in caramel, vanilla, brown sugar, and a ton of grape. In addition to the sugary notes is a splendid amount of oak and rye spice. Some peppery notes come forward and fill the nasal passage. Tasting brings the sugars immediately which coat the palate and tongue making the mouth water for the next sip. The finish is rather fleeting, attributable to the low proof but is a mouthful of flavor. Lovely offering but rather overpriced. The nose is refreshing and fruity. Vanilla, butterscotch, banana, coconut, pineapple, peach, and ripe mango come across immediately with the slightest hint of black pepper and tea. The palate matches the nose with vanilla, butterscotch, pineapple, and peach coming across and coating the tongue. The finish is of medium length and a very mild hint of pepper touches the throat. Not as complex as other rums and could be aided with a higher alcohol content but a very good sip nonetheless. Broken Barrel Cask Strength Bourbon

My original review upon opening was that the whisky was unbalanced, rough, and overly tannic. My nosing notes originally contained strong vanilla, honey, green apple, and tons of pepper and oak. Very spicey nose. The original tasting was that the product was very harsh, young, and unbalanced. I did not like it very much. As I allowed the bottle to open and let the oxygen do its thing, the flavors opened up incredibly. I pour it through a wine aerator to really allow the oxygen to do its magic before drinking it now and the result is splendid. The profile is now consistent on each visit. New notes: Nose - still has a ton of vanilla, and honey, but there is now an overwhelming freshness of orange and lemon. The oak and pepper are still apparent but not as astringent. Tasting - Caramel, burnt sugar, toffee, and vanilla are immediately apparent on the palate, with pepper and alcohol present in the back of the throat. The finish is long and flavorful. There is much to enjoy with each sip and there is so much more than just burn now. This bottle just needs air to open her up and its a different experience. Nosing: This offering is exceptionally aromatic. Triple distillation in bourbon, Spanish Oloroso Sherry an lastly into Pedro Ximenez Sherry casks gives this scotch heavy fruity notes. It is essentially a Christmas fruit cake in a glass. Immediately there are notes of orange, lemon, dried apricot, and peach. Than the vanilla, burnt toffee, and mixed nuts hit the nose. Brandy and sherry notes are also apparent. Tasting: Complex amount of sugars coat the roof of the mouth with caramel, toffee, and vanilla taking the main stage. Maple and honey are also present but only mildly. The fruits from the nosing are not as present, but there is apricot and raisin. Other notes are of semi sweet chocolate and pepper. Extremely complex and full of flavor with a very long finish. Fantastic scotch for the price. The nose is pure fruit juice -mangoes, pineapple, guava, peach, and lichee mixed with a hefty dose of vanilla and caramel. The taste is heavy on mango and pineapple tasting like a fruit cup. The flavors dissipate quickly and this is likely not created o sip neat and would go well in making rum cocktails like a Mai Tai or Pina Colada. Nose: Honey, vanilla, caramel, black pepper, and a small amount of cherry, green apple, and citrus. Taste: The spiciness is not apparent on the sip but the sugars sure are. Burnt caramel, honey, vanilla, and brown sugar are all apparent with green apple. Overall Impression: Nothing complicated about this and very fleeting finish. Reviewed June 18, 2024 (edited September 12, 2024)Nose: The sweetness of maple syrup, vanilla, honey, and honeydew melon are immediate but there is also some black pepper and a light amount of mint. The nose creates an anticipation for a sweet sip but the spices hit hard coating the back of the throat in a pleasant burn. The sweetness of maple syrup, and vanilla are strong with honey and burnt sugar also apparent. The flavors linger for an eternity, but the burn is fleeting making this a very well balanced whiskey and worthy of purchase. Well done Signal Hill. On the palate the spice hits immediately coating the back of the throat with mint, pepper, and oak spices. Brown sugar, vanilla, green apple skins, and char. Each sip is more sweet than the last, but each sip also hits the throat with spicey heat.....what a conundrum! Complex, and extremely enjoyable. The teeth feel furry, the throat feels warm, and the palate is properly coated......long finish and each sip leads for the want for the next. The nose is more reminiscent of a bourbon than of a rye in that the sugars are upfront and forward well in advance of the rye spices. Vanilla, caramel, brown sugar with apples and black pepper are the dominant notes. The sugars coat the roof of the mouth when sipped with very little burn to the throat. The low proof point of 80 prevents this whiskey from having much of a finish with the flavors all dissipating rapidly. On the nose, the aromas that immediately come forward are rye spice, vanilla, and smoke. Mint, and tart green apple are also noticeable. The tasting notes that are immediately present are the spices which hit the throat and sit there gently, followed by vanilla and brown sugar that coat the roof of the mouth. A gentle cherry note or perhaps a white grapefruit note is also noticeable. The smoke obtained on the nosing does not come across upon tasting. Further sips bring out a briny salt water note that is stunning. A good rye but pricey in my area and allocated.
