Nose: rye, dill, green pine, corn, butter, vanilla, olives/dill, Taste: heavy roast corn, charcoal, vanilla, butterscotch, a hint of malt, burning hay, clove, basil, cilantro, sage. Adding water brings out the oak barrel and lightens everything else while adding intense caramel. This really is a weird one. If you were blinded, you’d think it’s a rye. But there’s still the background hint of peat / charcoal. Apparently it has no rye and I saw it poured. The rye is really seemingly there but it’s not. Vanilla, Caramel, Blood orange, marshmallow fluff, cilantro, lemon Taste: Bacon, buttered popcorn, oak, creamy caramel / toffee, smoked salmon, lemon, lime, figs, roasted peanuts, Water brings out all the herbal notes. Cilantro, rosemary, sage, bayleaf. It also brings out a lot of the vanilla creamy notes. Salmon is actually the dominant note in this whiskey.30.0 USD per Bottle -

Brown sugar and vanilla with a spicy rye after taste. Almost a pear note in there. There is also a vague hint of banana. Goes down easy, almost watery.35.0 USD per Bottle -
Nose: cake malt, lemon, oats, light cream, brown sugar, apple, cherry, Taste: light coffee, cinnamon, brown sugar, maraschino cherries, red apple Dry mouthfeel and aftertaste. Water brings out more of the actual oat notes while adding some oak and increasing the maltiness. Really surprised how much this tastes like a bourbon. Taste: heavy oak and cherry up front that subsides to the classic peanut butter banana creaminess of Beam. Ends in slight clove and cinnamon with almost a bit of dill.
