Jim Beam Signature Craft 12 Year Bourbon

Reviewed July 26, 2017 (edited December 16, 2017)Ah, that classic Beam smell, but stronger than usual. Some deep caramel and honey, smells sweet. The nose really is wonderful. On the palate, it's sharp, the woody acidic notes are prominent. I get a hint of coffee, some bitterness. Some spice lingers. I sense that there's more, but it seems like it's constricted, like the bottle needs some air time to open up and release the flavors underneath. 7/26/17 All the above, with strong caramel and the addition of buttered bread. The acidic notes are still strong and for me that holds this back. 9/25/17 Great nose. This time I also get some additional earthy notes on the nose, something like mushrooms or truffles. The wood notes are still strong. On the palate, the sharp acidic bite is still there. Some turpentine and dark chocolate bitterness at the end. 12/16/17 -

Reviewed July 21, 2017 (edited December 4, 2017)Somewhat muted nose. Cloves. Classic Heaven Hill profile on the nose. Some nutty notes. A bit astringent on the tongue. Tastes young, a bit hot for the proof. Was hoping this would be as good as the 12-yr, even if different, but I think I can't say that. Will have to try it again. 7/21/17 -

Caramel, great spice, some citrus and a cream that lingers. Expensive, though perhaps the best Wild Turkey offering that's readily available today. 7/7/17 -
Heaven Hill Select Stock Bourbon

Reviewed July 14, 2017 (edited May 1, 2021)63.2 ABV. Lots of alcohol on the nose. I can discern some orange zest, and oddly, new car and mothballs. After a few minutes some honey scents emerge. Intense on the tongue, the bitter orange zest carries over from the nose. Sweet. Woody and bitter aftertaste. Flavors linger a while. After adding a few drops of water, the nose opens up with some brown sugar and vanilla, and more classic bourbon flavors on the tongue. 7/14/17 -

Reviewed July 14, 2017 (edited July 24, 2018)Nose stings a bit; there's deep caramel, and furniture polish. Some floral honey as well. On the tongue, thick mouth feel, very smooth initially and then the spice slowly cascades. Sweet wood notes. Very drinkable and feels substantial, but isn't quite as memorable as some of the others in the Heritage collection. 7/14/17 One year later, different bar/bottle, exact same flavor profile, I wouldn't change anything about my previous note. Reviewed July 12, 2017 (edited November 2, 2019)Nose stings. Herbal, maybe even mothballs. Some sour notes. Hot on the tongue, numbing, some cloves and spice. Wood notes, and a bit of honey. Warm. Short finish, except for the tingling spice and a hint of onions and barbecue sauce. 7/12/17
