Reviewed December 3, 2020 (edited December 24, 2020)Honey, spices, savory pepper On the nose after 30 min rest: orange, corn, tobacco as dominant. Deeper is black pepper, grapefruit or orange, red cherry, vanilla oak, black licorice, graham cracker, faint caraway. Taste: Pepper, caraway, anise, immediately transitioning to baking spices, sweet grain, graham cracker, black pepper heat late in the taste. Ends with a honeyed pepper and baking spices with a moderate decay. -

Reviewed December 2, 2020 (edited December 7, 2020)Cherry and spice Nose after sitting 20 min: Immediately red cherry is the dominant first scent. Then medium caramel, baking spices, vanilla, faint wisp of chamomile, some pepper, orange zest, lemon, blueberry, apple, bubble gum, cola, graham cracker, almonds. Taste: Begins with caramel, apple, spice, cherry/almond, a touch of salt, then decaying to baking spices, graham cracker, pepper, cherry and a moderate spicy, rich, and fruity finish. -
Chamomile tea in an antique house Nose after resting 15 min: Rye grain, black pepper, caraway, butterscotch, baking spice, dusty oak floor, orange, apple candy, chamomile Taste begins with chamomile, then a touch of apple, pepper, then sweet caramel and apple, more black pepper and with some heat, then tapering to a medium caramel and pepper spice finish, sometimes more of chamomile returns briefly. Finish is moderate length

Reviewed December 2, 2020 (edited December 18, 2020)Fruit and nuts with a cake frosting finish Honey, vanilla, apricot, port seem to be first on this nose. Marzipan and dates, Butterscotch, brine, sweet malt, fresh hay, citrus zest/coriander Taste: starts with a sweet note- honey, fruit, after swallow moves to briney, almond, dark dried fruit, then finishes with confectionery sugar, vanilla, and butter, touch of chocolate late. Medium length finish. -
Peat smoke, iodine, stone fruits, caramel, tar, sherry?, vanilla, oaky butter, orange, mild spice Tasting: Initial taste while coating is a caramel and fruity sweetness, at swallow the peat smoke and a tinge of bitterness bites with an overall smooth mouthfeel with smooth alcohol. The flavor continues to release stone fruit, then vanilla, a glimpse of bourbon sweetness, spice and finally decaying with residual mild smoke, ash bitterness, and caramel over a moderate length. Smoke is slightly harsh and not a lot of well developed age components as expected at 12yr. Would like to see more malt balancing bitterness. Good

Caramel toffee green apple Nose after sitting 15 min: Toffee and nuts are first initial notes. Following that are mint, butterscotch discs, black pepper, vanilla, clove, brown sugar, orange, maple, dried apple Taste: taste begins its journey on spice and green apple, with cinnamon, black pepper, orange zest, and clove predominating a spicy entry. From there the taste moves past the alcohol heat and into sweet, caramel and vanilla oak and, as this develops, more baking spice returns joining with a vanilla punch for for the remainder of the spicy vanilla and cola, moderately long finish

Peppery spice Nose after sitting open for 10min. Nose opens up to spices at the fore, anise, green and black pepper, tobacco, orange zest, caraway, some vanilla, oak wood dust, mango, horse hay, floral?, and cinnamon. Taste: Begins with a sweet rye and pepper punch that moves into some woody dankness, then to a meaty carmelly middle before tapering off to green and black pepper, cinnamon, a touch of heat, all spice, vanilla, over a moderate length and complex late finish.

Reviewed December 1, 2020 (edited December 3, 2020)In a snifter after resting for 30 min : Nose : Raisin is the first dominant scent to greet you, then lemon drops, honey, touch of smoke, vanilla, apricots, apple, pear, medium caramel, black tea, baking spice Taste: Yields a strong raisin and balanced sweetness at the onset followed by baking spices, orange zest, vanilla and brown sugar, and ending on a moderately long finish with spice, medium caramel, black tea, ginger, and candied fruit. -
Complex spiced apples and fruit After resting 10 min and warming Nose: decadent, complex, and strong aromas of raisin, apple, caramel, baking spices, apple, brown sugar, clove, peach, leather, black tea, cocoa The taste: grape raisin and brown sugar on the start followed by spice, caramel, tea, some astringency and ending on a moderately long finish of spiced apples and raisin.
