Batch 21-01 Nose: warm cinnamon spice, cut grass, honey, vanilla, burnt brown sugar, a little ethanol heat Palate: cherry, red apple, cinnamon, brown sugar and vanilla, a touch of oaky wood, hardly any burn given the proof Finish: cut grass, cherry, vanilla, brown sugar, cinnamon, a hint of licorice

Nose: sweet molasses initially, transitions to an interesting combo of umami, sea breeze and wet seaweed. There’s also a hint of smoke. Palate: relatively thin mouthfeel given the alcohol content. Not very oily. Smoke and a hint of ethanol burn up front. Only a little dark red fruit sweetness. A bit of woody oak transitions to brine at the end which segues to the finish Finish: Smokey, brine character becomes almost overtly salty. Long finish that transitions back to some oaky notes.

Nose: bright crisp red apple, cinnamon, touch of vanilla, a subtle hint of fresh bread. Like an apple pie with a hint of ethanol burn and a little oak undertone. Palate: moderately thick mouth feel, honey and vanilla, oak, a couple layers of spices predominantly cinnamon, a little bready. Finish: honey, vanilla, cinnamon, a touch of leather, a hint of oak late but fades back to apple and vanilla

Reviewed March 27, 2021 (edited August 28, 2021)Nose: rich and sweet oak, molasses, fresh baked bread, dark ripe fruit perhaps a hint of pear, touch of cinnamon Palate: apricot, cherry, raisins, a zest of orange. Oaky wood comes late Finish: apricot, a hint of sulfur, orange zest more prominent now. Deep spice with cardamom vs cinnamon. Smoked oak comes late again -
Nose: warm spiced cherries, extremely subtle peat, hints of toasted coconut, vanilla Palate: thick, oily mouthfeel, vanilla, some dark fruit with a touch of fruit roll up, a little honey. Overall quite sweet. There’s a touch of black tea and a trace of smoke and a touch of peat that never rises to prominence with a hint of sea salt. Finish: early refreshing mint, slight tingling spices and a mild alcohol burn. Becomes richer malty profile, with a hint of twizzler but avoids being overly sweet. Reviewed February 22, 2021 (edited April 15, 2021)Nose: warm honey, grain, hint of fresh cut grass, subtle spice notes, orange citrus Palate: mouth feel is initially thin on the sip but thickens if you hold in over your tongue. Surprisingly smooth. Tasting reveals vanilla, subtle honey. There’s a touch of peat and smoked oak. The spices on the nose transfer with only a hint of ethanol burn. Finish: honey, crisp apples, subtle sweet wood but not overly sherried, oak comes through as well.55.0 USD per Bottle
