Knob Creek 18 Year Bourbon (2023 Release)

Reviewed November 9, 2023 (edited February 7, 2024)Aroma - Oh yeah.. definitely usual Beam presence (which I personally enjoy). Getting a very rich deep oak, beam-nuttiness, leather, caramel and vanilla. Really hope the palate follow the nose, because the aroma is awesome. As it opens up, I’m getting dark fruit notes. Taste - oaky (but not over oaked), caramel, vanilla. The beam-nuttiness really isn’t has prevalent here as it was on the nose but it is still there. That nuttiness mingles really well in the finish. Overall - It’s very very good. I wish the palate was as bold as the nose but at 100 proof, it’s hard to be that critical. However, the finish is a bit longer that you would expect from a 100 proof offering. The finish is nice and oaky and the beam-profile isn’t over powering. Is it worth the price of admission!?!? Probably not if you enjoy higher proof whiskeys. However, If you enjoy the lower proof stuff then absolutely because I think the flavor profile is awesome. -

Reviewed October 20, 2023 (edited October 21, 2023)Aroma - holy crap. Apples pie, cinnamon sticks, apple cider, snickerdoodle cookies and Christmas gingerbread house.…. This is Fall in a glass. . If Cinnamon Toast Crunch & Apple Cinnamon Cheerios conceived a child, it would smell like this. There is no presence of alcohol whatsoever. Tremendous nose but this smells extremely sweet so I’m a little nervous heading into the palate. This is one outstanding aroma. Taste - Everything from the nose transfers to the palate. Apples, cinnamon toast crunch, Fall spices. Vanilla and huge blast of alcohol that takes all those sweet notes and brings balance. Overall - I’m a fan of BCS.. and this one is absolutely phenomenal. The finish on this is probably one of the longest I’ve ever experienced in a whiskey. The ABV is absolutely perfect for my palate. This offering might not be for everyone.. this one is bold and in your face. I can see a lot of bourbon fans frowning upon this where a lot of finished whiskey fans would go bonkers for it. 5.0 -

Reviewed October 20, 2023 (edited November 7, 2023)Aroma - alcohol soaked berries and deep caramel notes. Light hint of honey and cinnamon. Taste - light almond, berries and vanilla and bubblegum from time to time…The finish is massive butterscotch and cherries. Reminds me a dessert. Alcohol presence is big and bold. Massive hug. Time will do this wonders. Overall - Best batch I’ve had … Have to really try and savor this bottle. Far better than B523 and better than A123 as well. -
Early Times Bottled-in-Bond Bourbon

Reviewed September 26, 2023 (edited July 15, 2024)Aroma - typical main players here… the caramel, vanilla, very faint hint of oak. There is slight bright fruit note here and some citrus to round it out and create a nice balance. As it opens, potpourri notes start to come forward. For $25 this is really nice. Taste - Follows the nose, just everything is dialed back and turned down a notch but the citrus is more evident. More of an orange creamsicle note which I really enjoy. Overall - Drinks a little hotter than 100 proof to be honest (but only very slightly!.. Like around the 105-110 range) Finish is lacking and slightly drying (as expected)… But for the price, I think the value is well above average. The nose particularly is really nice and I would have never had guessed that this was a $25 bottle for a liter. Definitely something I think most should try and keep on hand. -

Reviewed September 26, 2023113.2 Proof 56.6%ABV Barrell #934 John’s Beverage Edition #1 2023 Aroma - corn and berries mixed with red hots. Lots of bready notes here with hint of black licorice. Nothing to get excited about. Taste - Nice balance of heat and spice (cinnamon, rye spice) with sweet notes (caramel corn, hint of vanilla) Overall - Wish I could provide a better a more in-depth review but this one lacks complexity. The balance is nice, but the mouthfeel is thin and finish is medium at best with presence of alcohol. Price of $60 is overpriced for the experience. There are so many huge heavy-hitting whiskeys in this price range that this is hard to compete. Drinks closer a $40-$45 bottle. -

Reviewed September 5, 2023 (edited September 6, 2023)Barrel 91 SB091 60.3% 120.6 proof Barreled Date 101917A Bottling Date 02/01/22 Aroma- Oak really shines here then secondary notes of dark chocolate and red hots and banana runts. Some butterscotch from time to time. Significant alcohol presence as well (to be expected though) Taste - Um…. yeah… where are the flavors? I get booze at the start, mid palate and in the finish. Every once in a while I pick up notes of butterscotch and alcohol soaked dark fruits. Maybe a slight hint of chocolate way in the back. I just belched and I got bubblegum lol. That was fucking weird. Overall - Really wanted to like this bottle since I love Chattanooga products but this one misses the mark by a wide margin. I opened this up a year ago, held off on posting the review of it because I thought it just needed time to open up but I am still getting the same profile from my previous tasting notes. There is no flavor to this whiskey. It lacks complexity, it lacks depth, it lacks an identity. In addition, the palate is boozy from start to finish. The finish is all alcohol. Very disappointing and when you factor in price (I’ve seen bottles going from $65-$90) it’s a slap in your face. With the ever increasing prices of bourbon, this is going to be hard a pass for me. I understand this is a single barrel but no way in hell i pull the trigger on this again. I much rather have their 91 or the 111 in a heartbeat over this because they are by far better tasting than this bottle. -
Found North Cask Strength Rye Whisky Single Barrel (Season 001, Barrel 005)

Reviewed August 24, 2023 (edited November 5, 2023)Finished in PX Sherry Grain 66% Rye, 30% Corn, 4% Barley 57.1% ABV (114.2 proof) Season 1 Barrel 005 Aroma - explosion of fruits. Tons of citrus notes here.. orange peel, hint of lemon pepper seasoning. Getting lots of dark cherry notes here as well. Rye is more bubblegum forward. As it opens, I’m getting lots of breakfast notes here. Blueberry pancakes with syrup all over. Absolutely phenomenal nose. Candle-worthy Taste - There is a quick hit of caramel and vanilla at the front of the palate but then a bomb of sherry notes goes off mid-palate that continues on with the finish. Strawberries, grapes and cherries very evident. The finish is long, and the older aged whiskies really pop here. Tons of old oak with a nice rye component and slight hint of maple syrup. Overall - My first FN offering and this bottle does not disappoint at all. Really nice viscosity and extremely dessert-like. You forget that this is 114.2 because it is extremely gentle and smooth. It honestly drinking closer to 90 proof in my opinion. The hug is almost non-existent. This bottle is worth every penny and then some at its price point of $100. -

As it opens up, I’m beginning to pick up pickle juice and black licorice. Rye is very bold here. Not sure what to expect on the palate. Taste - leather, oak, and massive wintergreen mints/gum. The wintergreen is insane to be honest. Getting some dill notes as well. That rye punch with the oak really works well. Mouthfeel is really nice and the finish is extremely long. Heat is presence comes through on the finish along with that slight dill note.120.0 USD per Bottle -

Reviewed August 24, 2023 (edited September 24, 2023)“Candied Pear” Aroma - melted brown butter with cinnamon, notes of molasses, chocolate, vanilla ice cream. Taste - honey, up from and it hits again on the finish. Mid palate is a mixture of caramel drizzle, cinnamon, pecan pie, and caramelized pears. The caramelized-pears are very evident with each sip to me and it is awesome,. Overall - this is quite exceptional. Crazy nose, crazy palate. Medium-long finish. Heat is awesome and well balanced into the sweet profile. -

Reviewed August 24, 2023 (edited September 24, 2023)Aroma - massive rye, pepper, bold alcohol presence. As it opens up, this thing explodes with complexity. Every time I come back to it something new decides to come out. Sometimes black licorice, gingerbread cookie earthy pine and floral… fruits notes of grape fruit, apricots, pineapple. It’s just a wild ass ride here and I have no idea what to expect on the palate. Taste - I don’t even know where to start. This is just a massively complex whiskey. Overall - the nose is amazing. The palate is a wild ride. Most complex whiskey I’ve ever had and it’s not close the oak presence really pops on the back on of the palate and continues through the finish. The hug on this is significant and long lasting. I’m a huge fan of cask strengths, etc but this one lets you know to slow down. $150 is justified and by far most you should pay = 4.5 $250 is absurd and a hard pass = 2.0 At $250 id much rather have the regular Seagrass
