Reviewed September 10, 2021 (edited September 12, 2021)Nose - very sweet, caramel, brown sugars, Taste- same with some wood but not much. Slightly perfumed with a hint of bitter under notes. Reviewed August 26, 2021 (edited December 12, 2021)Nose very hot on the nose but taste is much smoother. Taste much less burn than the nose suggested, vanilla and caramel meet some stone fruits. Finish the burn returns, a bit more spice and some rye definitely makes itself known. Be really interested in the source whiskey -
Last drops pour of a bar bottle. Nose- Clean salty breeze, gentle smoke at the end. Middle has a typical sweet backing of meat and wood cooking. Taste- smoke much stronger on the pallette but still gentle. Definitely peat but balanced compared to some over wrought bottles being done today. Salty brine. Underneath that is a sweeter cherry and baked pie crust that never quite comes to the surface for me until the finish. Finish- those sweet notes that came out fade and it's a cold beach day with mossy rocks, salty seaweed, oily smoked fish and diesel. Somehow that is amazing.Stack 571 Burger and Whiskey Bar - Olympia

Woodinville Cask Strength Straight Bourbon

Reviewed March 6, 2021 (edited March 17, 2022)Uncorking- Barrel pick from my local NW Bourbon group. Nose - burnt sugar, char and oak. Taste- Marshmallow, sweet, hints of wood and leather. Finish- shorter length with some darker cocoa nibs, more dark caramels and real vanilla bean extract. Tasted this against total wines barrel pick from earlier this year. This one has a much more pronounced burnt marshmallow sugar nose and start, then goes into much deeper flavors of leather and woods. Vs the Total Wine pick which stays much lighter and leans into dark fruits which this one has none of. Really interesting to see how much difference the barrel makes. -
Woodinville Private Select Straight Bourbon

Reviewed February 27, 2021 (edited February 28, 2021)This is a total wine single barrel select barrel proof. Barrel 3602 bottle 95, 120.26 proof Uncorking- Nose- took about 20min to really open in the glass. Once it did I am getting a lot of caramel, vanilla, light oak, some rye spice with hints of spearmint, dark berries after Taste- brown sugar, vanilla beans, sawdust, hints of spice, some vegetal flavors, rich. Spikes a little bit on the tongue in a pleasant way. Going back I got more flavors. Earthy, almost morel mushrooms. Almost hints of bacon fat. Going Finish - relatively long, cinnamon, sweetness, dark berries, bitter oak balances the sweetness and spice. Small hints of leather on the finish. Well I get the hype. It's definitely a standout barrel proof. I have a private club barrel pick coming in a few weeks and will go side by side. Tonight I put it against JD BP and EC BP Batch B520 Big hitters. 3 really different drams. The JD is a sweet forward pour with some oak and spice. The ECBP is all leather, wood, char. The Woodinville is almost in between. Sweeter than EC, more depth and darker flavors than JD. Interestingly when I tasted this between the others I liked it more than on its own. Funny how what else you taste influences perception. -

Reviewed February 24, 2021 (edited September 16, 2022)So I have edited this 4x. Every sip I return to is giving me more flavors and new tastes. Uncorking- Nose- nothing but campfire smoke initially but 5 min in the glass gave way to apple peels, saltwater taffy, ocean air, peat, plastic bags and sweet light marzipan. Taste- wow, hits hard right off the bat with campfire smoke, a spikey tongue feeling, pepper, tires, moss, oak, fruity tropical notes, and some char. So sweet and punches of flavor. Breathe in with this in the mouth and it spikes you with bold flavors and scents but somehow still easy to drink. After about 15 minutes I can't believe how sweet it is. Vanilla coming through too. Apricot. Finish- slightly drying, dried smoked fruits, peat, salty air and seaweed. Leathers and fruit leathers together. Some dark bittersweet chocolate in the back end. Almost burnt sugar sweetness.189.99 USD per Bottle -
Shieldaig 12 Year Speyside Single Malt

Reviewed February 22, 2021 (edited February 23, 2021)Nose- not much. Slightly sweet, hint of salt and smoke, slightly vegetal. Taste- bits of light chocolate, dark honey, apple skins, not a lot of flavor overall but easy to sip. Finish- short with.light fruit that ends in about 20 seconds. This is for someone putting smooth over everything but not looking for a lot of flavor. -
uncorking- Nose- dry peanut shells, caramel, spice Taste- peanut butter, brown sugar, leather, oak, Finish- hint of bitter closes out the sweetness of nut breads, like a zucchini or banana nut bread. Discontinued in 2018 for the barrel proof I stumbled on this in a tiny small town store and gave it a shot. Glad I did. Inspired a flight fight against EW Bib, David Nicholson Reserve. Was a lot closer than I would have expected. OE 7 won the nose but that slightly bitterness in the finish put it behind EW, and DN Reserve might have edged the top slightly. If I want peanuts I would go EW and if I want just rich caramels and smooth I'd go DNR.
